For the last day of winter break I tried to have some fun with the girls, and outside of a couple hours of cleaning fun in the morning (I had some post dinner party collateral damage to Clorox through).

We rainbow loomed. We had lunch with my sister and her kids and then we went to “Frozen.” I liked it- I actually cried a little. Twice. (please don’t judge me). If you have kids or grandkids you should take them. Coco is finally old enough to easily take to a theatre and sit through the whole movie and not talk, plus they were both just SO excited. It was really cute, so I am looking forward to taking them to the Lego movie too.

And then after a long day of being out and pretty much the WORST rain storm we have had all season, I just wanted to eat a great (easy) dinner and then cuddle up in my bed with 10 magazines. My mailbox was overflowing with Elle Décor, House Beautiful, InStyle, Vanity Fair, Living, Food and Wine and US weekly (don’t judge me) The mail lady must think I am a FREAK. Did I ever tell you about my magazine addiction? I must have mentioned it somewhere since it like, a substantial part of my life! But at least I finally starting getting subscriptions (um, I have like 5 others too) so that I could get off the grocery store magazine rack crack.

OK, I digress- let’s get back to the food. Stir Fried Rice Noodles with Shrimp and Green Onion Vinaigrette. What do you think? It’s Fast. It’s easy and it’s freaking good!!

Stir Fried Rice Noodles with Shrimp and Green Onion Vinaigrette

Chewy rice noodles, lightly stir fried and flavored with soy, sesame, ginger and a bright green oniony vinaigrette. A few plump juicy shrimp and a drizzle of sriracha make it a big bowl of perfect comfort food!

Recipe: Stir Fried Rice Noodles with Shrimp and Green Onion Vinaigrette

Ingredients

  • 8 ounces Rice Noodles
  • 3 tablespoons gluten free soy sauce
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil
  • 1 lb shrimp
  • 2 tablespoons vegetable oil
  • 2 green onions for garnish
  • sriracha (if desired)
  • Green Onion Vinaigrette:
  • 5 green onions
  • ¼ cup vegetable oil
  • ¼ cup rice wine vinegar
  • ½ jalapeno
  • kosher salt to taste

Instructions

  1. Bring a large pot of water to a boil. Then, remove from heat and add the rice noodles. Let the rice noodles sit in the boiling water for about 8 minutes. Then drain, rinse and drain again. Set aside.
  2. Meanwhile, add the Green Onion Vinaigrette ingredients to the jar of a blender and puree on high until you have a smooth bright green sauce.
  3. Heat a large wok, non stick pan or skillet over high heat. Add 2 tablespoons of vegetable oil and quickly cook the shrimp about 1 minute per side, flipping them when they are just cooked. Remove and set aside.
  4. Add to that pan, another tablespoon of vegetable oil, 2 tablespoons of sesame oil, the minced ginger and the soy sauce and cook for 1 minute until fragrant.
  5. Add the noodles and fry over high heat. Pressing them into the bottom of the pan to get some color on them. Add about half of the green onion vinaigrette to make it easier to toss and when the noodles are hot spoon them into bowls.
  6. Top with the shrimp and green onion garnish and drizzle the remaining green onion vinaigrette around the base of the bowl. Serve immediately.
