Marcona Almonda are pretty much one of the best things EVER. Super crunchy and salty and so rich from the added oil they store them in- I seriously cannot get enough of them. I have been plowing through the Trader Joe’s variety with the rosemary at an alarming rate. In fact there are still greasy little finger prints on my computer this very minute, and I am pretty sure that the almonds are to blame.
One day last week, I picked up a pint of regular (no rosemary) and had the overwhelming desire to go sweet with them. And because it was just a few days before Valentines day, I had chocolate on the brain, so into the mix it went. And when I went browsing through my cupboards looking for one more element, it became VERY obvious (because they were staring right at me!) Sour Cherries!!
I always have a stash of these on hand because they are so delicious in tossed salads, but I will also have handfuls of sour cherries and dark chocolate in moments of weakness (similar to a Peanut Butter spoon with chocolate chips kind of moment).
But throwing it all together in a cookie felt like it was probably the right thing to do, and it was not at all disappointing! I feel like the extra salt and oil on those almonds just push the whole deal over the edge.

I have never had marcona almonds, but I would say cookies would be a good place to start. These look amzing!
I love marcona almonds, so smart to throw them in a fab cookie!
I’ve never met a cookie I didn’t like! They look great! Pinned
Pinch me; I think I am dreaming – this combination sound to good to be true! Thank you for always inspiring!
omg- thanks Emma- that is so sweet!
Uh oh, this could be trouble! I buy the organic shelled walnuts at Trader Joe’s and never once noticed marcona almonds. These cookies wouldn’t last a day in our house.
they have them- but only the rosemary variety. The plain ones I had to get at my other regular grocery store. Now here’s the thing- I have also made these cookies with the rosemary version- but it was a mixed reaction. My hubby likes em plain and then my mom and brother were fine with the rosemary. I was trying not to scare people 🙂
P.S. Maybe you might treat us to a tour of your pantry sometime? I never have such interesting things in mine. Definitely could use a Heather’s Pantry Guide to liven things up around my house.
*ROAR* with laughter Vicki!!!! That is a great idea. except, I will have to clean and organize it first-lol!
These look like they have the perfect chewy center/crispy edges combo!

Woah, these look SO good. amazing.
I made these, and they were a hit!! Even my husband who does not like cherries in any form, LOVED these! Took some to a friend’s house to share, and they raved about them. Definitely going into the regular cookie rotation around here!
