Yesterday I posted a recipe for “The Best Gluten Free” Pizza Crust. (It seriously is really freaking good!) To make things easier for our allergic to everything daughter, I’m cooking Gluten-free in the house the majority of the time. It has not been a hardship, but it has taken some adjustments and some sneaking around how I would normally think about things.

For instance, lately I have had a TERRIBLE craving for Avocado toast. Well, it’s kind of hard to eat Avocado toast if you aren’t currently stocking the house with bread, right? But after I discovered that amazing pizza crust- I thought, why don’t I just turn it into the ULTIMATE avocado toast?!

That is what this pizza is- a fancy ode to avocado toast! A crispy, chewy and golden pizza crust generously drizzled in olive oil and a blossom of avocado slices blooming on top. Finely minced lemon zest, fresh lemon juice and a sprinkle of coarse kosher salt completes the most simple, beautiful and delicious “alternative pizza.”

Pia and I polished off the whole thing the other afternoon, and by the way- she is 6 and ate half of that pizza. I don’t know how it all fit in her, but that’s how good it was. With a green salad it would make the most lovely vegetarian dinner, but I could also see slicing thin pieces off as appetizers for friends. TRY IT…..

Recipe: Avocado Pizza

Ingredients

  • ½ a recipe of “The Best Gluten-Free Pizza Crust” or a regular pizza crust of your choice
  • 4 tablespoons olive oil
  • 3 ripe but firm avocados
  • 1 lemon
  • kosher salt

Instructions

  1. Bake the pizza crust according to recipe or manufacturers direction until the pizza is golden brown and a little crispy (remember, the pizza will not be baked again.)
  2. Brush 2 tablespoons of the olive oil over the crust.
  3. Zest the lemon and mince it very finely. Set aside.
  4. Discarding the pit and the skin, thinly slice the avocado. Arrange the pieces on the top of the pizza.
  5. Sprinkle generously with kosher salt, drizzle the avocado with the remaining olive oil and then squeeze half of the lemons juice over the avocados. Sprinkle the lemon zest over the top of the pizza.
  6. Slice and serve immediately! (The avocados will begin to discolor within an hour.)

Preparation time: 30 minute(s)

Cooking time: 20 minute(s)
