Pete, Pia and I are in the midst of a “Naked and Afraid” bender. Have you watched this show!? My God it is absolutely CRAZY. I get weak in the knees with every crazy thing that happens on that show. I wouldn’t last 10 minutes in one of those situations- especially in the Amazon with all those mosquitos. Mosquitos are my kryptonite. Anyways, I am a nervous eater, and am chowing my way through the mini bar in anticipation of what’s happening on the show. But really what I want are Almond Joy Cookie Bars.

The combination of Almonds, Coconut and Chocolate (otherwise known as “Almond Joy”) is one of my favorites. I used to specifically seek out the Almond Joy Bars on Halloween while my brothers and all my friends rejected them and traded me for m&m’s. While I still have a soft spot for those cheap candy bars, I also love the more grown up versions of the flavor combo and I have used them together in cookies and scones. So good.

But here we have kind of like amped up blondies packed with coconut and studded with crunchy almonds and creamy dark chocolate chips. The coconut makes it so moist and then every bite of these cookie bars is just packed with goodness.

In fact, I am totally drooling over these right now and wishing I had a whole batch here in my hotel room. I guess I will have to settle for the mini bar gummy bears- but you don’t have to! Hustle into your kitchen and in 45 minutes from now, you could be in Almond Joy Cookie Bar Heaven.

Recipe: Almond Joy Cookie Bars

makes 24 small bars

Ingredients

  • 1 cup butter
  • 1 ½ cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 14 ounce bag sweetened shredded coconut
  • 2 ½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 8 ounces slivered almonds
  • 10 ounces chocolate chips

Instructions

  1. Preheat the oven to 350 degres and line a ¼ sheet pan with tin foil and then spray it with baking spray.
  2. In the bowl of a standing mixer, cream together the butter and sugar until fluffy.
  3. Add the vanilla and the eggs and whip together until very fluffy.
  4. Add the coconut and combine well.
  5. In a separate bowl combine the flour, baking soda and salt and then add it to the cookie batter.
  6. Gently mix in the almonds and the chocolate chips.
  7. Transfer the dough into the prepared sheet pan and smooth evenly into the pan.
  8. Bake the cookie bars for 30 minutes and then let them cool completely before slicing.
