This is seriously the easiest recipe and it is incredibly elegant looking. A lot of bang for your 10 minute buck, you know what I mean?
Like this is a dinner party worthy dish and legitimately took 10 minutes to make!! How great is that?
Pete has been traveling this week so I am alternating between smoothies and easy stuff like this. And wine. That’s what happens when it is “girl time” we go for walks, paint nails, read books and then mommy drinks wine (just a little, don’t worry!) while they sing freaking frozen songs for hours at a time. I need a weekend away big time ☺
In the mean time, I hope this 10 minute meal, drenched in mint butter sauce (yes, that is a real thing and it is delicious) makes you and your family happy!
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes.
Meanwhile, juice the two lemons and set the juice aside. Bring a small pan of water to a boil and add the peas. Let them cook for one or two minutes until bright green and then drain.
Drain the pasta and immediately melt the butter. Add the pasta and the lemon juice and stir well. Add the fresh mint leaves and the peas and season to taste with kosher salt.
Add the thin slices of smoked salmon and a sprig of fresh mint and serve immediately.

- 1 cup mint, packed, finely sliced

This should be super easy to veggie-ize. I can just imagine the mint butter sauce. I think the Frozen soundtrack is driving a lot of parents crazy!

I like the Trader Joes Brand Rice based pasta. My favorite are the short cuts (like the penne and radiator) but the spaghetti is great too. I can hardly tell the difference anymore!
