I can’t believe it is Thursday. This is the last week of school so it has been crammed with fun stuff for the kids which has been adorable and sweet, but also I have a mountain of work that has piled up since I have been so busy with other stuff and now I am in total panic mode. This is one of those weeks that lasted forever and dragged at the same time, you know what I mean!? Also, I somehow (and don’t ask me how because I don’t even have a remote clue) seem to have been attacked by Poison Oak on my right lower leg. It is really, really red and angry. And no it doesn’t itch, it just really, really hurts. I am on Prednisone but I am all open ears if you know of any old family cures??
So this has been a long week topped off by POISON OAK!!!!??? And these my friends, are the kind of weeks when Thursday is particularly Thirsty. So #ThirstyThursday is back with a delectable Apricot Lime mojito that will bring relaxation to even the most insane of your days.
I absolutely love the tartness of Apricots, and when I made this homemade apricot puree it reminded me of my very favorite sweet apricot preserves. When it is combined with the fresh lime juice and the rum and mint- this is out of this world. Try one!!
Recipe: Apricot Lime Mojito
Ingredients
- 1/4 cup apricot puree
- 6 fresh mint leaves
- 1/2 lime, sliced in wedges
- 2 ounces white rum
- 2 ounces chilled club soda
- Apricot Puree, makes 2 cups
- 4 apricots pitted and chopped
- 1 1/2 cups water
- ½ cup sugar
- pinch of salt

- For the Apricot Puree:
- In a small pan, add the Apricot, water, sugar and salt. Cook for 3-5 minutes until thickened. Add to the jar of a blender and puree until smooth. Chill.
- For the Mojito:
- In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint. Add the apricot puree, rum and club soda and stir to combine. Serve immediately.

HaHa, So sorry about the poison ivy, really, but at first before I got to the recipe for the drink and looking at the picture, I thought you were incorporating poison ivy leaves into one of your drinks………! But no, thank God, still you do like to be creative! I hope the girls’ last few days are super fun and your poison ivy clears up quickly!

Are they a hundred per cent sure it’s poison oak? The reason I’m asking is a friend of mine had something similar recently and it went into a full blown staff infection after an allergic reaction. She was stressed and run down from moving and being exposed to sheet rock chemicals during house repairs. Strangest thing I’ve ever seen. Doctor, expensive dermatologist and antibiotics were the course but detoxing helped the most. I’m a stickler for Nature Made d-alpha vitamin E capsules pricked and put on every skin ailment there is; maybe just try it on a small area. On another note, this cocktail sounds amazing.
Vicki- NO!!! they are NOT positive that is what it is, but it seems the only logical diagnosis??? I will say that I have been running an estate sale the last few days and was exposed to lots of old fabrics and furniture items that have been in storage a long time, etc. and I was wondering if it came from any of that- but it is just seriously the most bizarre thing (and I am certainly stressed and run down to the max and we know I’m allergic to tons!). I am sending pictures to my dr. 3 times daily to make sure there is no infection, and the steroids have taken down the inflammation of the area, but not affected the wounds AT ALL. very, very bizarre.

Ok, so these drinks are a MUST make!! Seriously gorgeous and I love the apricot puree.
As far as the rash/poison oak goes I have had a few times in my life when I get a random onset of shingles. Usually it is in one centralized location each time, it doesn’t itch it just hurts like a mother!! Anyways, I say this because it always pops up when I am in periods of extreme high stress. I am sure your doctor would know what shingles look like, but since its a red rashy thing that may or may not be poison oak I thought I would throw it out there. I hope you get to feeling better soon!
