I do fry them to crispy, but they are wrapped in cool lettuce leaves and garnished with fresh herbs and veggies. Plus there is a delicious sweet chili dipping sauce sweetened with agave that is just spicy enough to add some depth to the bright lemony and ginger flavor of the meatballs.

Recipe: Lemongrass Pork Meatball Lettuce Cups with Sweet Chili Dipping Sauce

Ingredients

  • 1/2 pound ground pork
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons fresh lemongrass, minced
  • 2 tablespoons fresh cilantro, minced
  • 2 green onions, minced
  • 2 tablespoons rice wine vinegar
  • 1 tablespoons gluten free soy sauce
  • vegetable oil for frying
  • Sweet Chili Dipping Sauce
  • 1 tablespoon agave
  • 2 teaspoons sambal (garlic-chili sauce)
  • 2 teaspoons sesame oil
  • 2 tablespoons rice wine vinegar
  • 4 lettuce leaves
  • 1 carrot, thinly sliced and julienned

Instructions

  1. In a medium bowl, combine the pork, ginger, lemongrass, cilantro, green onions, rice wine vinegar and soy sauce.
  2. Form 12 meatballs and set aside.
  3. In a large heavy pan, heat a thin layer of vegetable oil. Fry the meatballs until they are browned on all sides and cooked through, 3-4 minutes.
  4. While the meatballs are cooking through, whisk the agave, sambal, sesame oil and rice wine vinegar in a small bowl.
  5. Put the hot meatballs in the lettuce cups and add the carrots. Serve immediately with the Sweet Chili Dipping Sauce.
