The first day of school calls for a good dinner. Actually Monday’s in general kind of call for a good dinner, don’t they? Monday’s always feel kind of long and I love settling into a nice comforting dinner with my family.
And even though it is still hot as Hades here in Seattle, I am just majorly craving fall and comfort food. So this is my compromise between summer and fall and healthy and comfort food. I am genuinely trying for really healthy right now, since I am WAY TOO sedentary for my or my waistlines comfort right now.
Plus I still have tons of zucchini
And tons of gorgeous heirloom tomatoes coming out of the garden….
You have a bright, hearty and really flavorful fast bolognese made with turkey (lean! Healthy!) and then while our kiddies had GF Pasta, all of us adults (my parents and Pete and I) had it over zucchini noodles. OMG. For being so healthy it was really, really good.
It is just the kind of meal that you want to start off a new week with –cozy, hot and super clean! I hope you guys have a great week!
Recipe: Turkey Bolognese
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 3 tablespoons tablespoon olive oil
- 1 yellow onion, rough chopped
- 2 cloves garlic, rough chopped
- 8 cups fresh tomatoes, rough chopped
- ¼ cup fresh basil
- 2 tablespoons oregano
- 2 tablespoons sugar
- 1 pound pasta or zucchini noodles
Instructions
- In a medium sized pot, add the one tablespoon of olive oil over medium-high heat. Add the ground turkey and break the turkey up very small with a wooden spoon while cooking. Cook until opaque and lightly browned, about 5 minutes. Transfer the turkey to a bowl and set aside.
- Put the pot back on the burner over medium heat and add the rest of the olive oil. Then add the onion, and a sprinkle of kosher salt. Cook until soft and translucent, about 5 minutes. Then add the garlic and cook another 2 minutes until fragrant.
- Add the fresh tomatoes and put a lid on the pot, reducing the heat to low. Let the tomatoes, onions and garlic simmer for 15 minutes until the tomatoes are soft and cooked through. Add the basil and oregano and red pepper flakes and stir.
- Working in batches, add the tomato/onion/garlic/ herb mixture to the jar of a blender and puree until smooth. Add the pureed sauce back to the pot and add the turkey back in. Add the sugar and season to taste with kosher salt. Simmer on low for at least another 15 minutes and serve hot over pasta or zucchini noodles.

Have to try making this with mushrooms instead of turkey to veggie-ize it! I’m really intrigued by the zucchini noodles. Oh, last weekend was the annual Greek food festival and I was in heaven! I bought their cookbook which has all the festival food recipes in it.
Oh yum Vicki! Some hearty chunky mushrooms would be so good! Our Greek Festival is coming up- I can’t wait, except for that I will probably barely be able to eat any of the food-lop! But they still will have the dolmades and souvlaki I will live vicariously through my husband with the lamb sandwiches and the loukamades!

Do u have any tips for zoodles? Mine are usually soggy. I don’t mind that much but I think my fam will put up a big fuss.
Heather- you may bug out- but I don’t cook mine- they are raw. I find that in their raw state they are milder in taste and they actually have some “tooth” to them which mimics real pasta. I have told this story before- but my dad ate most of a bowl before he asked what kind of pasta it was. (now that is a little extreme! but try it!)
