Or is it just like a horrifying epidemic in Seattle?) and now have happily settled for it’s morph into just a nasty upper respiratory deal- who would have thought that was fine with me!? Anything is better than the flu. So I have switched from Nyquil to Robitussin and that’s great. It’s like the good sleep without all the weirdo dreams. Ok. I will stop whining right now, because it’s annoying and really we are much better!

We went out on Friday night but then recovered on Saturday night by staying in and watching the most fascinating show ever. “True Stories of the ER.” Have you watched this show?!!!!!!! It’s on TLC and it is the craziest thing ever. It’s true stories of stuff that has happened to ER doctors, and some of it is beyond anything you could imagine. Pete and I drank scotch and screamed at all these weirdo things- but we just could not tear ourselves away! Hot weekend, huh?!

In bigger and more exciting news, this shall be a week of football celebration around here. It is absolutely no secret that I am a major Seahawks fan and die hard Seattle Girl, so we will most definitely be talking Superbowl.

And I kick off the Superbowl snacks today with these delectable Crispy Blackberry Honey Jalapeno Chicken Wings. Um, yeah- they are really good.

Spicy, a little tart and sticky honey sweet these are absolutely amazing and they feel oo-la-la fancy with their gorgeous purple-fuschia color. What a way to step things up a little but right? And don’t be intimidated by the deep frying- it’s a cinch and it gives you that incredible golden skin that makes every single crispy and juicy bite worth it!

Crispy Blackberry Honey Jalapeno Chicken Wings

Recipe: Crispy Blackberry Honey Jalapeno Chicken Wings

Ingredients

  • 2.5 lbs chicken wings (with tips)
  • Oil for frying
  • 2 cups Gluten Free All Purpose Flour
  • 2 teaspoons Kosher salt
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • ½ yellow onion, chopped
  • 1 jalapeno, chopped
  • 2 cups frozen blackberries
  • ¼ cup honey

Instructions

  1. Rinse the chicken wings with cold water and drain. Meanwhile prepare a large baking dish with the gluten free flour and salt.
  2. Bring a large heavy pot with several inches of vegetable or peanut oil up to 375 degrees.
  3. While you are waiting for the oil to come to temperature, add the chicken wings to the flour and salt mixture and toss to coat lightly in the flour. You will probably have to do this in two batches (same with the frying.)
  4. When the oil is at the appropriate temperature (I always use a thermometer for deep frying) gently add the chicken wings to the oil.
  5. While the chicken wings are frying (stir and flip occasionally over about 12 minutes) begin the sauce.
  6. In a small saucepan over medium heat, add the olive oil and the garlic, onions and jalapeno. Sprinkle with kosher salt and cook until soft 3-4 minutes.
  7. Add the frozen blackberries and the honey and simmer until the fruit is hot and bubbly, about 5 minutes.
  8. Throw everything in the jar of a blender and puree on high until you have a smooth sauce. Season to taste with kosher salt and set aside.
  9. Remove the golden chicken wings from the fry oil at the 12 minute mark and transfer them to a large bowl.
  10. Add half the sauce (if you have split them into two batches for frying purposes) and toss them to coat.
  11. Serve hot with fresh blackberries and finely cut green onions to garnish.
