OK. I have no idea how many of you go out of your way to celebrate Valentines Day with a bang?
Any of you? At all?
I hope some of you are still getting out there and making it a special night- or at least picking a night around that date to celebrate (My sister always tries to tell me that the 14th is amateur night- I think it is more like “no-one can get a babysitter night”) But I know for many of us who have no babysitter and a bunch of kiddies that it could also be more of a fun night for the kids than uber romantic. (I think Pete and I are going to have to pick another night to do something just the two of us!)
Like our house will be covered in paper hearts and glitter and I am just going to have the girls help to make a special dinner. In fact, Coco is obsessed with Shrimp cocktail and insisted that it be on the menu. I thought that it could be an easy and kind of special appetizer for you guys to throw on your stay at home menus as well?
But I wanted to make sure that we at least turned things up a little bit!? So I added a bunch of Asian spices and flavorings and then roasted the shrimp instead of boiling them. And the cocktail sauce is homemade and kicked up about 10 notches in flavor and zest from your average store bought stuff. Over all – it’s an awesome start to a special meal- (for me it could be the main meal with a bottle of champagne!?) hope you enjoy!
Recipe: Asian Roasted Shrimp Cocktail
Ingredients
- Asian Roasted Shrimp Cocktail
- 1 pound shrimp, shells removed (keep the tails on) and cleaned and deveined
- 3 tablespoons sesame oil
- 3 tablespoons fresh cilantro, minced
- 2 cloves garlic, minced
- 1/8 teaspoon red chili flakes
- 1 limes zest
- 1 limes juice
- ½ teaspoon kosher salt
- Asian Cocktail Sauce
- 1/3 cup cocktail sauce
- 2 tablespoons chili garlic sauce
- 2 tablespoons cilantro, minced
- 2 green onions, minced
- 1 tablespoon fresh ginger, minced
- fresh lime wedges
Instructions
- Preheat the oven to broil
- In a small bowl combine the sesame oil, cilantro, garlic, red pepper, lime zest and juice and salt. Mix well to combine and then toss the sauce with the shrimp. Turn the shrimp and sauce out onto a sheet pan and broil for 4-5 minutes until golden and cooked through.
- In a small bowl combine the cocktail sauce, chili garlic sauce, cilantro, green onion and ginger and mix well. Season to taste with kosher salt.
- Serve the shrimp (with any extra sauce) and the Asian Cocktail Sauce with fresh lime wedges.

LOVE cocktail sauce with my shrimp – i think my dunking ratio for shrimp vs cocktail sauce is like 5:1 hahaha – so with that said, this cocktail sauce you’ve got is totally my kinda sauce!

We NEVER go out for Valentine’s Day. Too rushed, too busy. Even at the best places the service and food on nights like that are usually not up to par. Not the servers’ or the chefs’ fault, just too many people all wanting a romantic dinner all at the same time.
We always stay in. I usually make something really special and crazy, like Beef Wellington and chocolate soufflé.
