Pasta is always a comfort food basic. Always. And I craaaave it. One of the great culinary blessings since the allergy revelation is that there was Gluten Free- egg free pasta, and that you could recreate favorite delicious dishes with it.

Last night we went to a restaurant Upland in New York, and they were insanely helpful with my food allergies. That included the fact that they had gluten free- egg free- dairy free pasta dishes. OMG- I was in total heaven. I pigged out on like 4 courses and it felt nice to be able to order so freely.

It also inspired me to post this awesome pasta dish for you which is similarly “clean” and totally delicious. Savory pork sausage, fresh green peas and a bright and lively zucchini marinara, full of zucchini (obviously), tomato, onion and garlic. This is perfect for an easy mid-week meal or really just any night. Enjoy!

Recipe: Pasta with Sausage, Peas and Zucchini Marinara

Ingredients

  • 1 pound gluten free pasta
  • 1/2 pound spicy sausage
  • 3 tablespoons olive oil
  • 1 yellow onion, roughly chopped
  • 1 garlic clove, minced
  • 1 large zucchini, rough chopped
  • 28 ounces tomato puree
  • 1 teaspoon dried oregano
  • kosher salt
  • ½ cup fresh peas

Instructions

  1. In a large sauté pan over medium heat, cook the sausage , breaking it up as it cooks. When the meat is mostly cooked through, about 5 minutes, transfer it to a bowl and set aside.
  2. Add the olive oil and the onion and sauté for 5 minutes. Add the garlic and zucchini and cook another 4-5 minutes.
  3. Add the tomato puree and the oregano and simmer over low heat for 10 minutes with a lid on the pan.
  4. Transfer to the jar of a blender and puree on high until you have a smooth sauce. Pour the sauce back into the pan. Season the sauce with kosher salt to taste. Add the peas and place the lid back on the pot and simmer on low heat while you make the pasta.
  5. Bring a large pot of salted water to a boil. Cook the pasta to al dente according to the manufacturers directions.
  6. When the pasta is cooked, add it to the sauce and toss gently. Add the sausage to the sauce and gently mix everything together and serve hot.
