You know what I forgot to tell you guys? That I am going to Cannes. In just a couple of days! I am tagging along on a work trip that Pete has (because that is most definitely the kind of work trips to want to tag a long on) and we are going to be gone for a week. My lovely parents are watching the girls and our hairy son Wilbur, so that we can sneak a week of guilt free grown up time in. Pete may be working (sorry honey!), but I am most definitely not!
Don’t worry, I am going to have posts rolling out all week, but meanwhile, I’m loading up my kindle with books (any suggestions??) and vegging out on a lawn chair somewhere in the gorgeous South of France. Hmmmm, maybe I shouldn’t have been eating so much pizza this week….
I’m going to be sleeping in and being lazy and it will be Thirsty Thursday every day as far as I am concerned. But today, it is all about this tantalizing Spicy Raspberry Paloma. Fresno chili gives a little kick to this grapefruit-tequila classic, while the raspberries lend sweetness and the most epic color ever. Cheers!
Recipe: Spicy Raspberry Palomas
Ingredients
- 2 teaspoons Fresno Red Chili, roughly chopped
- 1/2 cup Fresh Raspberries
- 1 cup freshly squeezed Fresh Grapefruit Juice
- 2 tablespoons fresh lime juice
- 4 ounces Tequila Blanco
- 1 cup chilled club soda
- grapefruit wedges or fresh raspberries to garnish if desired
Instructions
- In the bottom of two large glasses, divide the raspberries and chili. Muddle well until you have a raspberry-chili pulp.
- Fill both glasses with ice.
- Add the grapefruit juice, the lime juice and the tequila and stir. Top with the chilled club soda and stir well. Garnish with little wedges of grapefruit and serve immediately.

Hi! I just made this and it’s delicious but how do you keep the raspberry pulp from separating? Your color looks more blended out. There’s so many raspberry seeds floating around in mine!
