Ok, welcome to my new deal. The first ever Toasty Tuesday. I think that saying actually typically means that you get very drunk with your friends on a Tuesday night, but that’s not what I’m talking about- I am talking about actual toast. That you eat on a Tuesday.

BLT Avocado ToastFrom now on I am going to show you a new kind of toast every Tuesday. Weird? Noooo… Toast is perfect for breakfast, lunch or a snack, so why not celebrate it in all of it’s many glorious forms?! Some are recipes, and some are kinda-recipes (like below)- because I am sure you are capable of doing things like figuring out how many tomatoes you want on top of your toast, right? I happen to use Gluten free vegan bread, which is much better toasted anyways, so there is a win-win. And none of my toppings will ever have dairy, eggs or gluten in case you were wondering! (I’m sure you weren’t)

BLT Avocado ToastThe first in my new series is this de-licious! BLT Avocado Toast. Classic Avocado toast which is pretty much impeccable on it’s own, and then I added peppery arugula, crispy bacon and garden fresh tomatoes with a just a sprinkling of fresh bush basil (tiny leaves)- but regular basil chopped would be great too. You just need to finish it with a drizzle of olive oil and some kosher salt and you are in business! BLT Avocado Toast

Recipe: BLT Avocado Toast- gluten free

Ingredients

  • 2 pieces Toast, Gluten Free and Vegan
  • ½ a large ripe Avocado
  • ½ lemon
  • kosher salt
  • small handful of arugula
  • 2 slices crispy bacon
  • fresh tomatoes, sliced
  • 2 teaspoons fresh julienned basil leaves
  • 2 teaspoons olive oil
  • kosher salt

Instructions

  1. Toast 2 slices of bread.
  2. While the bread is toasting, smash together the avocado with a little fresh lemon juice and season to taste with kosher salt. Divide the avocado between the two slices of toast.
  3. Top the avocado with some arugula and a slice of bacon and then some fresh tomato slices. Sprinkle with the basil.
  4. Drizzle each piece of toast with 1 teaspoon of olive oil and sprinkle with kosher salt.
  5. Serve immediately.
