I gotta tell you- I just looooooove myself some good ceviche!! I made this recipe up last year after spending time in Mexico and it was probably my favorite appetizer to eat AND to serve over the last year. These were created originally for my sister’s last birthday and the whole long funny story of that I shared over on The Pioneer Woman’s site.
These tostadas have everything you want in a little byte- crispy, lime-y, spicy, sweet and fresh- just so good. Basically a perfect bite as far as an appetizer goes.
And the ceviche could be used in lots of ways. If you didn’t want to serve it on the fried tortillas, you could easily serve this over rice as a main dish, or inside of a hollowed out avocado like I did HERE. Or just serve it over fresh greens for a delicious and healthy salad.
But I have to admit- there is no way I would rather eat this shrimp ceviche than with a crisy fried tortilla chip. It’s just the right salty pairing for how light and refreshing the shrimp is.

I was thrilled to find a blogger in this area. I recently moved to the northwest from the east coast and love it here. I am a older person that doesn’t cook as much but love to read the younger generation ideas. I cook for one and at times it is hard to find ideas that I can cut down.
