Heathermade has launched in every Costco warehouse in the 6 states of Washington, Oregon, Idaho, Montana, Utah and Alaska! I can’t believe it.
Look for Heathermade in the fresh baked goods aisle (like where they sell the sandwich bread) in your local Costco and pick some up!
Ok, so now comes Veggie Stir Fry. Easy, totally delicious and meatless on Monday. We eat less and less meat when I can get away with it. Pia is about a hair’s breadth away from becoming an ethical vegan and Coco is a hard core carnivore that looks at Pia like she is crazy when she starts crying over whatever animal protein is on the table. So, it is interesting to walk that line of being respectful to both. Suggestions anyone?
In the meantime, as these children are busy forming their very LARGE personalities, I toe the line and make sure that they get a delicious, nutritious dinner. Stir Fry is my new best friend. It has magically made Coco start eating copious amounts of vegetables that she would literally NEVER eat otherwise. I can’t say that I totally understand, but I am not arguing- I find it to be incredible.
Often we add chicken, shrimp or pork (I will show you some of our other versions soon), but this time, I wanted to try it just veggies. The result is wonderful and still filling and satisfying. Try this for your family and see if they even notice that there is no meat!
- Stir Fry Sauce
- 2 cloves garlic
- 1 tablespoon tahini
- 1 tablespoon sambal
- 2 tablespoons maple syrup
- 2 tablespoons tamari (or coconut amino acids)
- 2 tablespoons rice vinegar
- 1 teaspoon cornstarch
- Stir Fry
- 2 tablespoons vegetable oil
- 1 yellow onion, chopped into bite sized pieces
- 8 ounces shiitake mushrooms
- ⅓ cup mirin
- 1 large yellow bell peppers, chopped into bite sized pieces
- 1 pound asparagus, trimmed and the stalks cut into 4 pieces
- steamed jasmine rice
- In a blender combine the garlic, tahini, sambal, maple syrup, tahini, rice vinegar and cornstarch and puree until smooth. Set aside.
- Place a large heavy pan or skillet over high heat. When the pan is VERY hot add the oil and the onions and shitakes and constantly while cooking over high heat for 2 minutes. Add the mirin to deglaze and steam the vegetables. After you have stirred it in, add the peppers and asparagus. Stir and cook another minute before adding the sauce. Cook with the sauce for 1-2 more minutes until the vegetables are tender.
- Spoon over steamed rice and serve hot!

I’m always up for a good stir-fry, this one sounds incredible. And, hmm, so hard to when you have to such different food preferences and values. I have that with blake and cole, I just end up being a short order cook. But they’ve finally learned not to rib each other about their eating habits.

Sounds like a really exciting opportunity! The stir fry looks great. I personally am a huge fan of asparagus and shiitake, although I’ve never had them together.

Congratulations on Heathermade! I look forward to checking it out as well as trying this delicious looking stir fry. I do have a question, I see tahini mentioned twice in the sauce. Should I add a total of 3T. of tahini?

I love all these flavor combinations in this stirfry and keeping that sodium level in check too – I always have a problem with that at home.
