Let me tell you a little about what is in this bundle: There are the 12 recipes below, which are a great sampling of the kind of allergen free deliciousness that you will find in the book. There are both light and fresh recipes (ahem fresh pea and honey salad) and totally decadent (double chocolate banana donuts!!) Plus there is a shopping list to make things extra easy.
APPLE MUFFINS –These tender muffins studded with chunks of fresh apple are something I make often, typically during the week. They are perfect for breakfast (not too sweet), to throw into their lunches and as great afterschool snacks. Plus the smell of them baking is amazing!!
CINNAMON APPLE PANCAKES – These are weekend staples in our household, and I know that you will love them too. Super fast and easy, you will be loving having tender fragrant and delicious pancakes again.
CHOCOLATE BANANA SUNFLOWER BUTTER SMOOTHIE – a favorite of my daughter Pia, this shake is a close cousin of a chocolate peanut butter shake- only more nutritious and allergen free. This can double as a dessert!
SHREDDED BRUSSELS SPROUTS SALAD WITH SOUR APPLE, JALAPEÑO AND HONEY VINAIGRETTE – This Salad is so fresh and crunchy, but the jalapeno and honey vinaigrette is sweet and spicy and truly one of my favorites.
FRESH PEA AND HONEY SOUP – I could honestly drink this by the vat (and have). It’s not only so tasty but really healthy and I love it as a starter or passed appetizer for parties too.
BRAISED CHIPOTLE CHICKEN TACOS WITH CILANTRO SAUCE– If you read my blog than you already know about my love for tacos (bordering on obsession) and these are no exception. Tender, smoky spiced chicken pairs with a bright zesty cilantro sauce for a perfect combo.
YELLOW CHICKEN CURRY– Thai yellow chicken curry is always on the line up when we order takeout. This is my home version, scented with fresh ginger and lemongrass and served over steamed jasmine rice. Your family will thank you!
CRISPY SALMON AND LENTILS –I absolutely love and adore salmon, I am a Seattle girl after all. There is nothing better than a perfectly cooked filet with a nice crispy brown skin that crackles as you cut it. This dish celebrates that and accompanies it with a bed of flavorful lentils. Easy enough for a weeknight, or elegant enough for a dinner party.
ONE-PAN PORK CHOPS WITH APPLES AND RICE– This is a wonderful recipe that makes me nostalgic for my Grammy who loved pork chops, and I really appreciate that it is one pot cooking. You could also experiment swapping the apples out for pears, persimmon or even mango.
DOUBLE-CHOCOLATE BANANA DOUGHNUTS – ohhh yeah. Chocolate and banana always go together and when coated in a glossy dark chocolate glaze (and sprinkles if you are in the mood!) you have a crowd pleaser every time.
SPICED OATMEAL RAISIN COOKIES –My mom used to make these when I was growing up and I will always have a soft spot for them. (It is actually the only baked good I can stand raisins in) and these are great for popping in lunch boxes!
APPLE FRITTERS WITH CINNAMON SUGAR AND HONEY –If I could only properly explain to you how amazing these were, you would be getting your fry order ready asap. These are everything. A crispy fluffy fried coating over thin slices of apple which are then fried turning that crust golden brown, and the apple inside to mushy apple pie filling (YUM!!!) plus a coating of cinnamon sugar on the outside. This sugar coma is one you will happily welcome.

Love your new book, making ceviche in the kitchen now! Can you clarify coconut milk used in your coconut-cilantro recipe? Canned unsweetened or boxed or refrigerated? Your intro talks about using both, but recipes don’t seem to distinguish when you use one or the other….and such a difference! Thank you for your help!

Hi Heather, I ordered your book and it just came today. I am very excited. I am an adult with food allergies and sensitivities. I just quickly looked through the book, the recipes to be exact! I noticed a lot of the recipes call for coconut cream or oil, etc. Isn’t coconut considered a tree nut? (tree nuts being one of my allergies). I know there is some confusion about whether coconut is really a tree nut or not. Thank you for your time, and the book looks great!
making the white cake…..not sure how long to mix until “fluffy” ?? put it into 3 smaller pans and seems to take longer than the 25 min….still moist with toothpick in center……
making it for my allergin grandson for his smash cake for his 1st birthday….now making a test one before the October 8 birthday
Carol- the cake is really moist, but it should absolutely cook in the 25 minutes. Please let me know how it turned out for you!
