Honey. Rum. Mint. Lemonade. All the things that are so sweet, refreshing and delicious- especially when they are all piled into one big batch of cocktails.
And this delectable drink was exactly what I was in the mood for after two all –day field day field trips in a row. 2nd graders Tuesday (well, that was a half day field trip) and then the Kindergarteners was definitely an all day affair. They are SO cute, but I just don’t know how you teachers do it. All of us mom’s who were there to help out were dragging by the end of the day- I can not imagine how teachers do it each and every day- Kudos to you all. I am incredibly appreciative. You are all saints.
So anyways, a couple days of kid volunteering and then the usual afterschool run of activities (oh, and my jobS) and I needed a drinky poo. And I thought I would share it with you since it is Thirsty Thursday and all. Honey Rum Mint Lemonade. Sweetened only with honey so it has a much deeper, less saccharine sweetness that is a lovely companion to the white rum and the sour lemon. The mint makes it light and refreshing. Just the thing for a hot Summer evening!
And by the way- just leave out the rum for a totally delicious KID FRIENDLY lemonade- this was originally developed for Pia (without the rum!) because it was sweetened with honey not sugar. If you are vegan, feel free to sub in agave.
- ½ cup honey
- 1 cup water
- 1 cup freshly squeezed lemon juice
- ½ cup mint leaves
- 1 cup white rum
- 3 cups cold water
- ice
- In a small sauce pan, combine the honey and the water and bring to a simmer, whisking until it is melted into the water.
- Fill a pitcher with ice and add the mint and rum. Then add the honey mixture, the lemon juice and the cold water and stir really well to combine. Serve chilled.
- Preparation: 10 minutes
- Cook Time: 5 minutes
- Servings: 4-6
