It’s Father’s Day this weekend and I had to think up something for my family men! And it had to be really, really good- because these guys like to eat. Like really like to eat.
Since I am hosting for my hubby, my dad, my brother and brother-in-law this year, I know it has to be awesome. I tested it out this week, and Pete gave it the double thumbs up. Well, not literally- but he did shove it in his mouth and say “Oh my God, this is so F*^%*$# good!! Its like pizza Guacamole!” I have no idea what he was talking about pizza for- but apparently he was a fan o f the loaded guac I made as an example for you. Avocado, Bacon, Corn, Red Onion, Cilantro, Jalapeno, Red Chili, Tomatoes, Lime and Salt.
I am more of a purist: I went with Avocado, Red Onion, Jalapeno, Cilantro and Lemon Juice- oh and lots of salt.
However you do it and whatever toppings you like- consider this for your Sunday festivities! I love how then everyone gets their own portion (because I love to double dip, and it’s just socially wrong- even with family members) and you can truly make it to suite your needs. Like how I love a simple, chunky batch, and Pete freaks for all the things in one bowl- to each their own!
I think that this is a fun way to start dinner no matter what else you are serving, your family will love it!
- 8 small-medium avocados, just ripened and cut into chunks
- fresh raw corn kernels
- red onion, finely chopped
- cherry tomatoes or roma tomatoes, chopped
- fresh cilantro, finely chopped
- Cooked bacon, finely chopped
- Jalapenos, finely chopped
- Red fresno chili, thinly sliced
- Radishes, thinly sliced
- Lemon wedges
- Lime wedges
- Kosher salt
- Scoop portions of avocado chunks into individual chunks and then let people add the additional ingredients that they want. Smash with a fork and let them enjoy with tortilla chips!

Is there a substitute for unsweetened coconut milk, coconut oil, unsweetened shredded coconut, coconut cream, anything coconut… in your recipes? I just got your book and love it, but I am allergic to coconut. I would love to make all the recipes you have for baking, but can’t!!!! Horror! (I do see there are some recipes that don’t call for anything coconut and I will be trying these.) What about flax milk as a substitute?? Thanks.
Hi Lisa, absolutely. I am assuming you are allergic to dairy products and to nuts? You can swap out Coconut oil for olive oil or avocado oil and Coconut milk for any type of non-dairy milk that works for you. As for coconut cream, that is more difficult. If you are not allergic to all nuts, then thick or homemade cashew milk or almond milk would be a good choice. In recipes that call for shredded coconut you could either omit it or add dried fruit (it depends on the recipe).I hope that this helps a little, and please let me know if you have questions on specific recipes, I would love to help.
