Red, White and Blue is totally obvious I know, but I tried to interpret it in a new way. I made red strawberry popsicles, blueberry syrup and use white sparkling wine. I know, I know- everything turns out kind of reddish pink in the end anyways- but they are still festive and gorgeous right?
Not to mention devilishly delicious and ultimately boozy- just the way I intend to spend my long Holiday weekend ☺
- Strawberry Vodka Boozy Popsicles
- ⅔ cup water
- ⅔ cup sugar
- 2 ½ cups chopped straweberries
- ¼ cup fresh lime juice
- ¼ cup vodka
- Blueberry Simple Syrup
- 1 cup water
- 1 cup sugar
- 1 ½ cups blueberries
- 1 bottle chilled sparkling wine (prosecco or cava)
- For the Strawberry Vodka Boozy Popsicles:
- In a small pot combine the water, sugar and strawberries. Cook until the sugar has dissolved and the strawberries are softened about 3 minutes. Pour into a blender with the lime juice and the vodka and puree on high. Strain the seeds if desired and pour the mixture into popsicle molds (I had 12 single popsicles in my mold.) Place a popsicle stick in the top of the popsicle and then freeze until solid, at least 4 hours.
- For the Blueberry Simple Syrup:
- In a small pot combine the water, sugar and blueberries and cook for about 5 minutes over medium heat until the mixtures has cooked down some and is syrupy. Puree on high in a blender and then run it through a fine meshed strainer and into a glass mason jar. Chill and store in the refrigerator.
- For the Cocktails:
- Place a tablespoons or two of the blueberry syrup in the bottom of the cocktail glasses and then place a popsicle in the glass. Fill the glass with chilled sparkling wine and serve immediately.
