I know that this is like barely a recipe- but maybe that’s why it’s so good for a Friday!
One of the things I miss the most since I discovered my food allergies a few years ago, is obviously grilled cheese sandwiches- anybody else?
But I recently made this sandwich and it was SO GOOD that it really gave me the sensation that I was eating a grilled cheese sandwich. I know it was all about the toasted bread that made it like I was eating a sandwich made up of two crispy olive-oily croutons. yum.
With the smoked turkey, crispy bacon and a thick layer of chunky guacamole this sandwich has everything I needed to feel satisfied and like I just ate something sinful that was a total cheat- but it’s not!!
- 4 pieces of bread (I used gluten free vegan white bread)
- 2 tablespoons olive oil
- kosher salt
- 4 ounces smoked turkey
- 4 pieces crispy bacon
- Chunky Guacamole:
- 1 large avocado, peeled, seeded and cut into chunks
- 2 tablespoons finely chopped red onion
- 2 tablespoons finely chopped fresh cilantro
- ½ limes fresh juice
- kosher salt
- In a nonstick pan over medium heat add the olive oil and the 4 pieces of bread. Toast until golden and then flip over and repeat. Total time should take about 5 minutes.
- Pile the smoked turkey, crispy bacon and guacamole on two pieces of the bread and top with the other two pieces. Slice in half and serve hot.
