Is anyone else devastated that Game of Thrones is over? But somehow equally relieved? I mean, I am so obsessed with it that I can barely stand that we have to wait 10 months to go back to the story. My reactions are so out of hand to every episode, Pete is freaked out by me.
But the reasonable part of me recognizes that I haven’t slept more than an hour or two on a Sunday night in many, many months. I watch those episodes and then I am up all night thinking about it. Truly- I am not just saying I am obsessed, I actually really am. So I recognize that it is better that the show is not on and that I try to resume my normal life in the meantime.
Like the really great time we are having here in New York. Pia has been fencing at the Tim Morhouse Fencing Club here in Manhattan- for non-fencing folks, whom I assume is EVERYONE! Tim Morhouse was an Olympia Fencer, and Pia has had the incredible experience of training at his club and even getting to train with him. Basically she is walking on cloud 9 aaaalllll day long. Coco and I are basically adventure walking all day long. It’s funny how you don’t always realize that you don’t get as much time alone with a certain child, but I realize right now that she, my baby, has definitely not gotten as much alone time in the last year, so I have really, really enjoyed spending so much time, just the two of us this last week. We set off every morning after we drop off Pia and then we have like 7 hours to muck about before picking her up. We walked 7 ½ miles today. Coco had to go soak in a hot bath when we got back, but I am loving every minute of it.
Ok- I will stop blabbing about and lets talk about the most insanely delicious summer salad ever. A crunchy romaine lettuce base is perfect for the most glorious toppings EVER! Shredded chicken, crispy bacon, creamy avocado, juicy tomatoes and fried peaches, red onion and fresh corn. Everything is drizzled in a zesty and sweet honey mustard dressing and the whole combo is absolutely delicious! Make it for your friends or family this week- you will love it!
- 4 slices bacon
- 1 red onion, cut into rings
- 1 ear of corns kernels
- 1 peach, cut into slices
- 2 heads Romaine lettuce, finely sliced
- 2 cups shredded cooked chicken breast
- 1 cup cherry tomatoes, halved
- 1 ripe avocado
- Honey Mustard Dressing:
- 1 tablespoons grainy Dijon mustard
- 2 tablespoons honey
- ¼ cup olive oil
- ¼ cup rice wine vinegar
- kosher salt
- In a heavy pan or skillet over medium heat cook the 4 pieces of bacon until golden and crispy, about 4 minutes on each side. Remove the bacon to a cutting board and chop it up into bite sized pieces.
- Return the pan to the heat with the bacon fat and cook the red onion rings with a sprinkle of salt until tender, about 4 minutes on each side. Then add the peach slices, cooking them about 1 minute on each side. Lastly add the corn and sauté for 1 minute.
- Arrange the lettuce on a platter or in a bowl and add the chicken, tomatoes and avocado and the bacon, onion, peaches and corn.
- In a small bowl whisk together the honey mustard dressing and season to taste with kosher salt. Drizzle the salad with the dressing and serve immediately.

I find any recipe with meat, revolting. But, I think, recipes with two different meats or more, are evil. I would be grateful to Heather if she starts distancing herself from using meat.

Since the world doesn’t revolve around you, maybe you could just leave the meat out of her recipes, and substitute tofu. She has plenty of vegetarian recipes as well! You should try them! They are on her website.

I’m SO sad we have to wait almost a year for the next season. But man, season 6 was amazing. Well, the last few episodes at least! I need to stuff my face with this salad. Oh my gosh..just everything about it is LOVE!!
