Cherry Rum and Cokes are totally addictive and a little bit dangerous! Fresh cherry syrup is the best way to Summer-fy your cocktails!!
I know it’s only Tuesday, but all I can think about is the weekend. We are Vegging out, BBQing, hanging out with friends and totally obsessing over being in our own house and being able to cook (and drink!!) again.
And he best way possible to pre-maturely kick things off for the weekend on a Tuesday is with a Cherry Rum and Coke, don’t you think? Sometimes I just LOVE a really cold Coke (it’s the best hangover cure ever by the way). And this is packed with ripe juicy cherries and a healthy splash of rum- which makes it all the more festive! Enjoy the weekend!!!
- Cherry Simple Syrup
- 1 ½ cups Cherries
- 1 cup water
- 1 cup sugar
- 4 ounces dark rum
- 12 ounces cold coca-cola
- ½ cup chopped, pitted cherries
- To make the Cherry Simple Syrup: Combine the cherries, water and sugar over medium-low heat and bring to a simmer. Let it cook for about 5 minutes until the sugar dissolves and the liquid has started to thicken. Add the cherry simple syrup to the jar of a blender and puree on high. Strain if desired into a jar and cool.
- Fill tall glasses with ice and add some of the chopped cherries and 2 tablespoons cherry syrup and rum and then top off with cold coca-cola. Serve immediately!!
