I am writing this as I get ready to head to Costco for a nice long weekend of meeting lovely people, sampling all of my heathermade products and talking until I have full blown larangytis.

I actually feel grateful that I am up and atem at all! I have kind of been having a perfect shit storm of a week. A really nasty cold that I can only assume came from the airplane last weekend (but truly- aren’t summer colds so disgusting?) the internet has been down at the house until this morning (cue me banging my head against the wall) and Pete was out of town so I didn’t feel comfortable taking stuff like Nyquil at night, (because as all moms who stay home alone at night know- I was busy all night thinking about what I will do should someone try to break in to my house. You guys do that too, right? Or am I just crazy?)

But Pete got home yesterday and I took Nyquil at 6:30 and got like 11 hours of sleep and I woke up today feeling about 80% better. I can breathe and my face isn’t so pale and puffy that people who know me can’t look at me without grimacing and turning away- so that is an improvement.

Ok- I will quit babbling and share with you this lovely cocktail- GOOSEBERRIES!!! These were at my local grocery store recently and I just couldn’t resist- they were SO gorgeous and sweet and tart!

Elderflower and champagne (or any sparkling wine) just seemed the perfect compliment for this delicate berry and I love the results, especially with a little splash of rose water. I think if you couldn’t find gooseberries that green grapes or raspberries would be a great substitution. Happy Weekending!

Gooseberry Elderflower Champagne Cocktail

Ingredients
  • 1 ounce Elderflower
  • splash of rose water
  • 4 ounces chilled champagne or sparkling wine
  • gooseberries
  • rose petals for garnish
Instructions
  1. In a chilled champagne glass add the elderflower, rose water and champagne. Add the gooseberries and garnish with rose petals.
