I have had a weird-o week, so Thursday makes me happy- just one day closer to the weekend, right?

I am kicking off my Thirsty Thursday by drinking Beer straight through the middle of the day. Shouldn’t all Thursday’s be like this?

I actually love beer, and ever since I figured out the old Gluten allergy, it hasnen’t factored into my booze game nearly enough. I find that I still cook and bake with Gluten Free beer, but I have not spent enough time sampling them to drink- like just for fun. So today I am teaming up with my friend Jackie (um, known as the Beeroness, so she knows her stuff) and All Recipes to do a Gluten Free Beer Tasting on Facebook Live at 2pm Thursday the 11th. Then I can be sure to let you guys know the results!

Then when my beer sampling is done, I think I am just going to dive right into these Blueberry Ginger Mojitos, because my kids are on a trip with their grandma, and so, why not?

You will love these Mojitos- gorgeous color and sweetness from the blueberries, with just a hint of fresh ginger and then all that fresh mint and lime- YUM! you want to make these this weekend for sure!

Blueberry Ginger Mojitos

Ingredients
  • ½ cup blueberry ginger puree
  • ¼ cup fresh mint leaves
  • 1 lime, sliced in wedges
  • 4 ounces white rum
  • chilled club soda
  • ice cubes
  • mint leaves, lime wedges and fresh blueberries for garnish
  • Blueberry Ginger Puree, makes 2 cups
  • ½ cup blueberries
  • 1 thin slice of raw ginger, about 1” long
  • ½ cup water
  • ½cup sugar
  • pinch of kosher salt
Instructions
  1. For the Blueberry Ginger Puree:
  2. In a small pan, add the blueberries, ginger slice, water, sugar and salt. Cook for 3-5 minutes until thickened. Remove and dispose of the ginger and then add the blueberry sauce to the jar of a blender and puree until smooth. Chill.
  3. For the Mojito:
  4. In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint oil. Add ice cubes, the blueberry ginger puree, rum and club soda to fill the glass and then stir to combine. Serve immediately.
