Crispy Potato Chive Pancakes with Smoked Salmon- Gluten, Dairy and Egg Free

Have you all recovered from Christmas yet!? We were ZOMBIES for the last two days getting over the late nights, early mornings and soooo much booze and food. Fun overload. I have played like a million rounds of Memory, Pay Day and Operation over the last few days as well as putting together glow n’ grow terarriums, fairy gardens and make your own spa soaps. Also, it’s all about Netflix. Pete and I have been geeking out on things like Tales of Great Britain’s Castles (I love stuff like that by the way.) Since one of the castles I learned about was Sterling Castle, which is at the base of the movie Braveheart, I have now promised Pete that I will watch that tonight since I have never seen it. Also, if you follow me on instastories you will see that I made two monstrously enormous lasagnas the day after Christmas and we have been feasting on leftovers ever since. One was this fan-favorite lasagna recipe and then I made a vegan lasagna for Pia that turned out amazing and that I will share with you in the new year.

**UPDATE: Obviously, Braveheart was amazing.

Now that we have rested up I am fueling my obsession with New Years Eve. I love that even though we rarely have a swanky occasion to go to, that we always do something festive. For years now we have celebrated with a group of our close friends and we all contribute. I LOVE doing the appetizers. There are endless opportunities to wow and treat your friends to delicious bites that really start the night out right and these Crispy Potato Chive Pancakes with Smoked Salmon are just the thing for this year!

Crispy Potato Chive Pancakes with Smoked Salmon- Gluten, Dairy and Egg Free

They are fried and crispy on the outside and creamy mashed potatoes on the inside which hold the heat really well. When they are topped with that cold salty bite of salmon (and caviar if you desire) it is like heaven! I could eat a whole plate of these no problem! If you wanted to skip the salmon, trust me they are still awesome- the kids ate about 20 of them on their own. Crispy Potato Chive Pancakes with Smoked Salmon- Gluten, Dairy and Egg Free

Ingredients
  • ½ cup unsweetened refrigerated coconut milk (from a carton)
  • 2 tablespoons apple cider vinegar
  • 2 large russet potatoes, peeled and chopped into bite sized pieces
  • 2 tablespoons olive oil
  • ½ cup finely diced yellow onion
  • ½ cup gluten free all-purpose flour
  • ¼ cup fresh chives, minced
  • kosher salt
  • Olive Oil for frying
  • Smoked Salmon
  • Paddlefish Caviar (optional)
  • Fresh dill
Instructions
  1. In a small bowl combine the coconut milk and the apple cider vinegar and set aside.
  2. Add the potatoes to a medium pot and add water just to cover the potatoes. Simmer until the potatoes are tender.
  3. While the potatoes are cooking begin cooking the onions. Take a heavy pan, (I used a cast iron skillet) and put it over medium heat. Add the olive oil and the onions and sprinkle with kosher salt. Cook until the onions are soft and tender, but not browned, about 7 minutes.
  4. Use a slotted spoon or strainer and lift the potatoes from the water and add them to the bowl of a standing mixer fitted with a whisk attachment. Take the starchy potato water and put it back on the stove over high heat. Add the curdled milk to the pot and boil to thicken the mixture to about 1 ¼ cups liquid.
  5. Meanwhile whisk the potatoes until smooth. Sprinkle the flour into the potatoes and add the cooked onions and oil from the pan. Then add the liquid a little at a time while the mixer us running until you have added all of the liquid and you have a smooth mashed potato mixture. Season to taste with kosher salt and then fold in the chives.
  6. Add oil to coat the same cast iron skillet or heavy pan and use an ice cream scoop or spoon to scoop the potato mixture into the pan. Let them sizzle for a minute and then gently flatten the pancakes with a spatula and fry for about 2 minutes over medium-high heat. Flip the pancakes and cook another 2 minutes until crispy and golden.
  7. Transfer to a platter, and while you cook more pancakes, top the first batch with small pieces of smoked salmon, a sprig of fresh dill and top with a small spoonful of caviar if desired. Continue until the potatoes are all used up!
