Are you guys ready for New Years Eve!? I am so excited as I love any occasion for a pretty cocktail!
We are having a huge dinner with a bunch of our friends potluck style. I am responsible for the salad (I’m thinking this one) and a vegetable side dish (torn between this and this), Pete is grilling Fish and I think I am going to have to bring a batch of these pretty drinks! (keep in mind that is only how much our family is bringing- so there is definitely going to be a lot of food and drinks!
I have not talked much about sake around here, but I LOVE it. It’s truly one of my favorites, so I thought I should most definitely add some to my NYE cocktail for fun!
You can make the syrup on these as early as today and then save it for Saturday. If you are serving these to a crowd, double or triple the syrup recipe!
- Blueberry Pomegranate Simple Syrup:
- ½ cup water
- 3 tablespoons sugar
- ½ cup blueberries
- ¼ cup pomegranate juice
- 4 ounces cold sake
- Chilled Champagne or Prosecco
- Simmer everything together for about 5 minutes or until the blueberries have gotten plump and soft and released their juices. Transfer to a bowl or mason jar and refrigerate.
- In a tall glass add 2 tablespoons of the blueberries and syrup to the bottom of 4 glasses.
- Fill the glasses with ice cubes and then top the ice in each glass with 1 ounce of sake and then fill the rest of the glass with chilled champagne or prosecco.
