Oh man… I came from 4 days in glorious Mexico alone with my husband to the darkest, rainiest Seattle imaginable. Like even for a native Seattleite it’s been bad the last few days!

I am also just finally getting to my normal annual TRUE reset of January 10th. I always start THINKING healthy on the 1st, but I have to wait until after Pete’s Birthday on the 9th to really get into the swing of things. It’s possible I will even talk myself into a Whole30 soon- we will see since I am really trying to embrace balance this year! Balance and Exercise! #GOALS

I love crispy pan cooked salmon so much- being a Seattle girl, Salmon is just one of my favorite things. And when you put that thick extra crispy skin on a tender, flaky piece of fresh fish, it is truly great.

When it comes to a condiment for fish this good, I love the idea of adding a really fresh, bright and delicious fruit salsa. I made this and this variety with Salmon this summer, and now I thought it was only right to create a winter counter part. That is where this winter fruit salsa came in. Cranberries and pomegranate seeds pair with traditional spicy jalapeno, white onion, cilantro and lime to create a very unique and

delicious dish perfect for a weeknight, or any special occasion.

Recipe: Crispy Salmon with Winter Fruit Salsa

Ingredients

  • • 2 six ounce Salmon Filets, Skin on
  • • 2 tablespoons vegetable oil
  • Winter Fruit Salsa
  • 1 cup fresh cranberries thinly sliced
  • ½ cup pomegranate seeds
  • ¼ cup white onion, small diced
  • ½ cup fresh cilantro leaves, roughly chopped
  • 1 jalapeno, seeded and small diced
  • 1 limes juice
  • kosher salt to taste

Instructions

  1. In a heavy pan or skillet, heat the vegetable oil over medium high heat.
  2. Sprinkle the salmon with kosher salt on both sides. Place the salmon skin side down in the pan. Cook without moving for about 3 minutes and then flip over to the skin side up.
  3. Cook until crispy on the outside and just cooked through in the center, about 6 minutes total.
  4. To make the Salsa:
  5. Gently combine everything in a medium sized bowl and season to taste with a little kosher salt.
  6. Spoon the salsa over the hot crispy fish and serve immediately.

Preparation time: 10 minute(s)

Cooking time: 6 minute(s)
