However, this week we are doing the sober version of Thirsty Thursday! Pete and I are still doing Whole30 (DAY 18!!!) and there is no booze allowed. So I had to make some yummy sugar and alcohol free drinks so that we could still have something great to drink.
That led me to making these All-Natural Fruit Sodas. Their base is made with a puree of roasted fruit (which caramelizes the fresh fruit and really intensifies the flavor) and fresh orange juice. Then you just add some fresh mint and cold club soda. Add a squeeze of fresh lemon and you have a wonderfully, naturally sweet drink that is perfect for a healthy treat or boozy alternative. Enjoy!
- 1 cup of fruit (I used mango, raspberries, blackberries and cherries)
- ¼ cup orange juice
- Cold Club Soda
- Lemon wedges
- Fresh mint
- Preheat the oven to 400 degrees. Cover a baking sheet with parchment paper and place the fruit on the parchment paper. Roast the fruit for 15 minutes.
- Place the fruit in the jar of a blender and add the orange juice. Puree until smooth.
- Divide the puree between four glasses and then fill them with ice cubes. Add fresh mint and a squeeze of fresh lemon, then fill the glass the rest of the way with cold club soda.
