Yes. Spring has FINALLY arrived in Seattle. It may be the late as hell, but I will take it!! We have 7 days of sun or partly sunny and I am going to be outside as much as possible!! The kids are pumped to be able to play outside and I think it is even going to reach the 70’s this weekend (for us Pacific Northwest Natives that is hot.)
And “hot” weather means popsicles!!
Well, frozen treats might be more accurate.
Because these are fruity and slightly sweet, but also creamy with coconut milk (YUM) They are basically like a smoothie in a popsicle! (not so bad, right!?) Because they are not loaded with sugar, I have been just fine with the kids eating them after school every day this week. Coco seems especially into them which is surprising since she has the bigger sweet tooth- but I am going to roll with it! Try them- and be sure to add the edible flowers for a really pretty touch!
And the color is just so pretty
- 2 cups blackberries
- ½ cup honey or agave
- 2 cups unsweetened coconut cream (the thick white part)
- 2 teaspoons vanilla
- pinch of kosher salt
- Optional: edible flowers to freeze in molds
- In a small saucepan combine the blackberries and the honey over medium heat. Simmer for a few minutes until the honey has melted and the blackberries are bursting and very juicy.
- Transfer the blackberries and honey to the jar of a blender and puree on high until smooth. Add the coconut cream, vanilla and salt and puree until well combined.
- Pour into popsicle molds, add a stick and freeze until solid. Enjoy!
- (you can add edible flowers to the molds)

Question – what do you think about putting these into ice cube molds (big ones) and then pouring champagne on top?? You think they would melt weir with the coconut cream – what would be a good sub for the coconut cream if that wouldn’t be fitting?
Um, I think that would be AMAZING!! Please try and send pictures! I would use a thick cashew or almond milk of that is a possibility or of course you could always use cream if you can have dairy?
