Happy Thirsty Thursday!! I am in New York right now and will be through the weekend, which I am spending in the Hamptons (so excited, I have never been there- have you guys?)
If anyone else is doing summery things (or even just sitting on their couch- that would be ok too) then you should probably entertain the idea of making these cocktails to liven things up!
These kind of take Vodka Lemonade to a whole new level. The ginger simple syrup makes the drink, and then you add a handful of fresh cherries and pomegranate seeds to the mix (I know they are out of season but they still always have these at Trader Joes) so I couldn’t help myself. If you can’t find pomegranate seeds, I would just add more cherries, or maybe some apricot slices?
Perfect for Summer sipping- cheers!
- ½ cup ginger simple syrup
- 1 cup fresh lemon juice
- 1 cup vodka (optional)
- club soda
- ½ cup fresh pomegranate seeds
- ½ cup cherry slices
- ice cubes
- fresh lemon slices for garnish
- ginger simple syrup
- ½ cup sugar
- ½ cup water
- ½ inch slice of raw ginger
- In a small saucepan, heat the sugar, water and ginger until the sugar dissolves. Dispose of the ginger and transfer the syrup to a heat proof container (like a mason jar) and refrigerate until ready to use.
- In a pitcher filled with ice cubes, combine the ginger simple syrup, fresh lemon juice and vodka. Stir well and then fill the pitcher the rest of the way with club soda (more or less as you prefer).
- Fill 4 glasses with ice cubes and add lemon wedges and cherries and pomegranate seeds. Pour the punch over the ice cubes and serve immediately.

Hi, am so in love with this drink, i want to try it out, just one question if i dont have the pomegranates can i just have it like that? Or what else can i substitute them with? Thanks!
Just skip the seeds and sub in more cherries or apricot or peach slices would be great too!
