Is it sort of obscene to post a cocktail on a Monday? Well, sorry/not sorry. I’m flying home from Europe as this posts and I have been enjoying an afternoon cocktail quite a bit these last few weeks- even on Mondays. And despite the fact that I have reality awaiting me later today, I figured that most of you are on an extended holiday weekend and would enjoy a boozy treat today.
Welcome to mojito time….
One of my favorite cocktails of all time and this time we are spicing thing up (literally) with Nectarines and red chili!
You still get the traditional flavors of refreshing mint, brown sugar and tart fresh lime juice, but I have added ripe, juicy nectarines and spicy red chili too. Oh, and rum, obviously.
These are the perfect thing to whip up this weekend and I would serve them with an appetizer like this, this or this!
- 1 cup fresh mint leaves, loosely packed
- 1 fresno chili, thinly sliced
- 1 cup fresh nectarine chunks
- 3 tablespoons brown sugar
- ½ cup fresh lime juice
- ½ cup rum
- cold club soda
- fresh mint leaves, nectarine slices and fresh fresno chili slices for garnish
- Split the mint leaves and red chili between 4 tall glasses. Use a muddler and smash the mint leaves and chili up a bit.
- In the jar of a blender, combine the nectarine chunks, brown sugar and puree until smooth.
- Divide the puree between the 4 glasses and then fill the glasses with ice. Pour the lime juice and rum over the ice and then top the glasses off with cold club soda. Gently stir the drinks, garnish as desired and serve immediately.

The holiday weekend is over… but this still sounds AMAZING to me!
OMG, Mojito’s are my favorite drink. I’ve never added chili’s in my mojito but I’m about to!! Amazing photos by the way!
