Ok. Honestly, I don’t eat red meat that often, but if I am going to go for it- this is the way to do it. MY GOD. These ribs are insane.
If you are entertaining- this could be one of the easiest recipes with the most bang for your buck ever. The marinade takes just a few minutes to prepare (basically you just throw a bunch of stuff in a blender) and then you could let the ribs marinate all day, or even 24 hours and you will have the best ribs of all time. And I’m sorry- but you can not beat the fact that they just take like 4 minutes to grill. WHAT????
If you make these just for your family, I would serve them with crispy ginger rice and some steamed broccoli. If you are making them for a crowd try them with one of these recipes:
Apple, Daikon and Cucumber Sesame Salad
Red, White and Blue Potato Salad
- 2 pounds of beef chuck short ribs, thin-cut
- Sweet Gingery Korean Marinade:
- 4 cloves garlic
- ¼ cup fresh ginger chunks, peeled and rough chopped
- ½ cup brown sugar
- ½ cup tamari
- 2 tablespoons toasted sesame oil
- For Garnish: toasted sesame seeds, thinly sliced green onions and fresno chili
- In the jar of a blender, puree all of the marinade ingredients until smooth. Add the ribs to a Ziploc bag and add the marinade to the ribs.
- Refrigerate at least 30 minutes and up to overnight.
- Heat a grill to medium and add the ribs. Cook for 2 minutes on each side and then set aside to rest for a few minutes.
- Sprinkle with toasted sesame seeds, thinly sliced green onions and fresno chili if desired before serving.

Hi Tammy- I have not done it- but I would think maybe broil for just like 2-3 minutes and then check on them. Maybe flip for another 2-3 minutes.
