We are so out of it around here. I am seriously having a hard time getting back into the swing of things, and mostly find myself fantasizing about vacation. And wine. And dessert. Sigh….

Since I have taken wine and chocolate off the proverbial plate for now, (due to tight pants issues) I will have to keep myself full with reeeaallly tasty healthy foods. Because in my mind that is the key to getting through these tough post-bingeing periods. And that is certainly where we are! (You know, like when you are so conditioned to vacation mode that when you wake up your stomach is like “where is my full brunch and Bloody Mary’s??? Only it’s a Tuesday.)

Anyways, blah, blah, blah! Did you already see that I have been soup cleansing?? Well, this Asian Chicken Zoodle Soup is just next level “souping.” It’s also next level for all of it’s incredible flavor. The ginger, garlic, sesame and fresh green onions and cilantro add SO much to this brothy soup. And the zoodles truly satisfy the cravings for real noodles! You have got to try this soup, which also happens to be very easy to prepare- it is the perfect weeknight meal and heats up really well for lunches the next day!

Asian Chicken Zoodle Soup

Ingredients
  • 2 tablespoons sesame oil
  • 2 cloves garlic, sliced paper thin
  • ¼ cup fresh ginger, peeled and finely chopped
  • 4 stalks celery, finely chopped
  • 4 large carrots, peeled and finely chopped
  • 1 large yellow onion, thinly sliced against the grain
  • 8 cups chicken broth
  • 4 large zucchini, spiralized
  • 3 cups shredded chicken
  • 4 green onions, thinly sliced
  • 1 cup fresh cilantro, roughly chopped
  • sesame oil and sesame seeds for garnish
  • Sambal (chili- garlic sauce), optional
Instructions
  1. In a large pot over medium-low heat add the sesame oil, garlic and ginger. Carefully watch the garlic and ginger, stirring often until they are golden and crispy. If you need to turn the heat to low than do so to make sure that the garlic does not burn. This should take about 5 minutes. Use a slotted spoon to remove the ginger and garlic from the pot, reserving in a small dish.
  2. Keep the pot and oil over medium heat and add the carrots, celery and yellow onion. Stir and sauté for about 3 minutes and then add the chicken broth. Bring to a simmer and add the chicken. When the soup has come to a simmer again, add the zoodles and then season to taste with kosher salt.
  3. Serve the soup up hot in bowls and sprinkle the top with green onions and cilantro and a little bit of the crispy ginger and garlic. Add a few sesame seeds and a tiny drizzle of sesame oil. If you desire add a dollop of sambal for spiciness! Enjoy!
