Happy Thirsty Thursday! I hope that your week was great and that Valentines Day rocked! I had to share a festive cocktail with you, because with everything going on in the world, cocktails are a #PRIORITY right now.

Not sure what you have brewing for Valentines Day, but if you are anything like me it will mostly be about the kids and serving up a special homemade dinner for the whole family while wearing yoga pants. But just because I won’t be out in a cocktail dress sipping champagne doesn’t mean that we can’t spice things up a touch with fun cocktails served before dinner? I mean it would probably help homework hour to go faster, plus it’s kind of nice to do something special for you sweetheart, right?
I love a good Moscow Mule, and I had to take into consideration the fact that pink is pretty much mandatory on Valentines Day, right? So that’s where the blackberry and pomegranate juice comes in-plus the flavor of both with the ginger beer is fantastic.
So whether you make these for you sweetie, your girlfriends, your next party or tonight for #ThirstyThursday, this is a drink you will most definitely want in your arsenal!
- 8 blackberries
- ½ teaspoon sugar
- 4 ounces pomegranate juice
- 2 tablespoons fresh lime juice
- 3 ounces chilled vodka
- chilled ginger beer
- ice
- fresh blackberries and pomegranate seeds for garnish
- Add the blackberries to a cocktail shaker and sprinkle them with the sugar. Muddle them really well until you have a pulp. Add half of the pomegranate juice and muddle some more until you have a dark red-purple liquid. Add the remaining pomegranate juice, lime-juice and the vodka along with some ice to the shaker and shake vigorously.
- Fill two cocktail glasses with ice and strain the cocktail evenly between the two glasses. Fill the remainder of the way with ginger beer and garnish with fresh blackberries and pomegranate seeds if desired.
