Happy Thirsty Thursday! With Cinco De Mayo coming up this weekend, I absolutely had to drop a margarita on you. Do you guys go out and party on Cinco De Mayo? Or make tacos at home with the family, or just to town on a big bowl of guacamole? I am always good for at least a bowl of guacamole and some margaritas!
And these are the way that I am liking my drinks lately- with no sugar. I am finding that I do best drinking my booze less sweet, so skinny it is! Plus we don’t even need a simple syrup because of the MANGO!! They are so bountiful at the grocery store, so it is impossible not to enjoy cooking and baking and drinking with them right now.
And please don’t get scared by the coconut part of this- I added coconut water because it has that slight natural sweetness and I love the idea that it is full of electrolytes that are doing great things for me and hopefully counteracting all the naughty parts of drinking cocktails.
- 1 fresh mango, chopped
- ½ cup chilled coconut water
- ⅓ cup fresh lime juice
- ½ cup tequila blanco
- ¼ cup orange liquor (I like grand marnier)
- Ice
- For the Mango Puree:
- Add the chunks of fresh mango to a blender and add the coconut water. Puree on high until smooth. Add the lime juice, tequila, and orange liquor and puree until well combined.
- Fill 4 glasses with ice and pour the margaritas over the ice.
Ooooh, this is such a tropical margarita—I LOVE it!
in addition to being too sweet, the sugar in margaritas also seems to give me a headache, so am very pleased to have this mango sweetened version, very nice and thank you
Any idea what the carb count is?
We made these last night for supper club… check out instagram for some pictures 🙂 added some extra lime/coconut to thin them out and they were delicious!!!! Oh and of course the tequila and patron citronage symbiotically sang with the mango!
