I really wanted to share this super easy and pretty appetizer platter with you in case you were planning to entertain this Fourth of July, or were planning to bring a dish to a potluck- this is an absolutely wonderful option.
I love that it works for every diet plan imaginable, especially since the dip can obviously be swapped out for something else if you are not doing hummus (think keto, whole30 or paleo.) However, if you do eat legumes, then the brilliant magenta beet hummus is a great choice!
Obviously you can use your preferences and imagination with the veggies you use for your own platter but here are some suggestions:
Red:
Radishes, bell peppers, cherry tomatoes
Orange:
Carrots, Bell Peppers, cherry tomatoes, orange cauliflower
Yellow/White:
Carrots, Bell Peppers, Cherry Tomatoes, white endive, white easter egg radishes, cauliflower
Green:
Cucumbers, persian cucumbers, celery, snap peas, romanesco, broccoli
Purple/Pink:
Purple endive, purple carrots, easter egg radishes, purple cauliflower
