Oh jeez, I meant to post this for Monday, and now two days have run away from me! But I am excited that I have been creating new content for you and am BACK! I am still doing a little traveling back and forth to Vancouver BC over the next few weeks, but am primarily back in Seattle and trying to settle into my normal life- which is refreshing, and also a little weird after spending 6 months going back and forth every few days.
I have been trying to get back into good healthy routines desperately. After what feels like a long hard winter (why was it still snowing in MARCH!?) I am back in the saddle of spinning (although we will save the arthritis conversation for later) and am investigating some good resistance training options (anyone tried F45?)
So, in the spirit of my new exercise routine, I have started out this week with a super healthy frame of mind. I spent the whole weekend working, so I was happy to have some time to meal prep on Sunday to try and make that as easy as possible!
One of the recipes that I made sure to do a double batch of was this one! It was so fresh and delicious and Pia was basically fighting me for the little lettuce tacos that we made with it.
Perfect for work and school lunches and very tasty! It’s also keto, whole30 and paleo friendly and gluten and dairy free! Enjoy…
- 2 cups shredded cooked chicken breast
- 1 ½ cups diced celery
- 1 large avocado, diced
- 4 green onions, finely sliced
- ¼ cup shelled pistachios, chopped
- ¼ cup minced fresh curly parsley
- 4 radishes, thinly sliced
- Zest of 1 large lemon
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- kosher salt and black pepper
- In a small bowl, combine the lemon zest, juice, olive oil and whisk together.
- In a bowl, combine the chicken, celery, avocado chunks, pistachios and parsley. Drizzle the dressing over the salad and gently fold everything together. Season it well with kosher salt and black pepper.
- Top with the radishes and serve. You could also serve a few tablespoons of the chicken salad on leaves of romaine hearts.
