Happy Thirsty Thursday!!

So happy to share this fresh, delicious grapefruit mojito with you! I am heading down to Vegas right now, so I definitely thought I should share something good with you so that we could have a virtual cocktail together!

This is my long-awaited weekend away with JUST Pete, no kids, and finally not for work. It has definitely been a while and we need it!

We haven’t been down to Vegas in a year and I can not wait to spa, lie by the pool, GAMBLE and eat everything! You can follow along on Insta-stories and see what we get up to. What are your favorite things to do, places to go, shop and eat in Vegas?! We haven’t finalized our places to eat yet, but we are staying at the Wynn (because we are so old!!!) and I have a full spa day set up on Thursday post flight. Saturday without a doubt I have a date with a lawn chair by the pool. Craps is calling to me. Perhaps a little blackjack too. I also saw they have soul cycle AT OUR HOTEL!!! what are the odds?! So unbelievably, I am also going to try and get a workout or two in. Other than all of that, I am open- please send suggestions!

Grapefruit Mojitos

Ingredients
  • ¼ cup fresh mint leaves
  • 1 lime, sliced in wedges
  • 1 tablespoon raw sugar or coconut sugar
  • ½ cup fresh grapefruit juice
  • 4 ounces white rum
  • 4 ounces chilled club soda
Instructions
  1. Mint and fresh grapefruit slices for garnish
  2. In two tall glasses, divide the mint, lime and sugar and muddle them together in the bottom of each glass. Fill the glasses with ice cubes.
  3. In a cocktail shaker, combine the juice and rum and shake well. Pour over the ice filled glasses and then top each glass with a little bit of cold club soda. Serve with a sprig of fresh mint and a wedge of fresh grapefruit.
