We were in Canada last summer (2018!) to film this when she was 8 and it seems like a million years ago- I am just so proud of her and the whole cast and can’t wait to see the whole season unfold!

Coco and Pia are here in this video to show you how to make Galaxy Cupcakes! These are a very moist delicious chocolate cupcake with vanilla frosting colored in galaxy colors and topped with edible stars and planets! They are so pretty and extra delicious as well as easy to make!

- 1 ¼ cups 1:1 Bobs Red Mill Gluten Free flour
- 1 cup sugar
- ½ cup unsweetened dark cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup vegetable oil (or melted coconut oil)
- 1 cup unsweetened non dairy milk (I used oat milk)
- 2 teaspoons vanilla extract
- Vanilla Frosting:
- 1 cup room temperature vegan butter
- 4 cups powdered sugar
- 1 tablespoon vanilla
- 2 tablespoons unsweetened coconut milk
- Sprinkles
- For the cupcakes:
- Preheat the oven to 350 degrees and line a muffin tin with paper liners.
- In the bowl of a standing mixer fitted with the whisk attachment and combine the dry ingredients. Add the oil, vanilla and milk and whisk until smooth.
- Scoop the batter into the prepared muffin liners and bake for 16 to 18 minutes until the cupcakes are baked through. Let the cupcakes cool completely before frosting.
- For the frosting:
- For the frosting, whip together the vegan butter, powdered sugar, vanilla and coconut milk until fluffy and smooth.
- Divide the buttercream into three sections and color each one a different color. When using a pastry bag or tube, add equal parts of each color and they will naturally blend together when piped.
- Add sprinkles if you desire!

I like and make gluten free treats. And sometimes vegan. But I know that sugar is also unhealthy for you. And when I see a recipe that has almost as much sugar as flour, not counting the icing, I know that it would not be what your body needs. That is why so many are overweight, I have been baking for many years, making all my cakes, ice creams, muffins….all baked goods/treats with a lot less sweetener than flour. Using honey, maple syrup, agave or sometime just fruit. Everything I make is gobbled up. Many times those eating it don’t even know it is not with white, or brown sugar. If a recipe looks interesting, tasty to me, I will change it. Making it something our bodies should be eating, Just like craving, using and eating too much salt, our bodies start to want overly sweet foods. An addiction.
Not healthy.
Cute cupcakes, but I would change the recipe to make them healthy.

Coco was adorable last night in Gabby Duran and the Unsittables! You must be so proud!
Heather! I loved Coco in her new Disney show! She was absolutely fantastic and I’m blown away by her performance. Disney surely has another hit with “Gabby and the Unsittables”. I have our Tivio programmed to record every show. Please tell Coco I loved her and am very proud that I know her! Heather, you’re amazing that you made this happen.
