Coco and Pia are here in this video to show you how to make Galaxy Cupcakes! These are a very moist delicious chocolate cupcake with vanilla frosting colored in galaxy colors and topped with edible stars and planets! They are so pretty and extra delicious as well as easy to make!

Galaxy Cupcakes (Vegan and Gluten free)

Ingredients
  • 1 ¼ cups 1:1 Bobs Red Mill Gluten Free flour
  • 1 cup sugar
  • ½ cup unsweetened dark cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 1 cup unsweetened non dairy milk (I used oat milk)
  • 2 teaspoons vanilla extract
  • Vanilla Frosting:
  • 1 cup room temperature vegan butter
  • 4 cups powdered sugar
  • 1 tablespoon vanilla
  • 2 tablespoons unsweetened coconut milk
  • Sprinkles
Instructions
  1. For the cupcakes:
  2. Preheat the oven to 350 degrees and line a muffin tin with paper liners.
  3. In the bowl of a standing mixer fitted with the whisk attachment and combine the dry ingredients. Add the oil, vanilla and milk and whisk until smooth.
  4. Scoop the batter into the prepared muffin liners and bake for 16 to 18 minutes until the cupcakes are baked through. Let the cupcakes cool completely before frosting.
  5. For the frosting:
  6. For the frosting, whip together the vegan butter, powdered sugar, vanilla and coconut milk until fluffy and smooth.
  7. Divide the buttercream into three sections and color each one a different color. When using a pastry bag or tube, add equal parts of each color and they will naturally blend together when piped.
  8. Add sprinkles if you desire!
