You know what is so sad? We don’t get any trick or treaters. The very first year we moved into our house, I was all ready to be mobbed and have tons of trick-or-treaters and live out my dream version of Halloween that included hundreds of children in costumes and our house being the most exciting/fun/best candy house! I had Costco kink-sized candy bars and every spooky but still glam decoration I could think of. And you know what happened? I had three trick or treaters. THREE!!!!! Also, I ate about 20 candy bars while sitting around waiting for the trick or treaters who never came. King sized candy bars. That is when I knew that we just couldn’t make trick-or-treating happen on our block. I mean- I finally realized that our hill was lame and no one wanted to walk up it. It was just a recipe for disappointment and me eating 20 candybars! So now I make a big batch of Chili, pack some of these brownies for the road (my favorite!) to go and we trick or treat elsewhere.
So despite the fact that we are not buying a bunch of Halloween candy, I do like to bake quite a lot at this time of year (lots of those recipes coming your way!) It’s probably me compensating for the fact that I’m not buying Halloween candy.
Honestly all I can think about is comfort food – mostly chocolate and pumpkin baked goods and everything sweet and naughty, LOL. I thought that I would share a nice light recipe with you! Because, balance, right?
If I am going to be eating all dessert all the time, I have to mix in some healthy, easy and tasty recipes too!
This Honeycrisp Chicken Poppyseed Salad is just the ticket!
I was thinking about what to do with a roast chicken that we had in the fridge (my kids were a little “souped” out, so I was trying to think what else we could have. Also, how often do you have a rotisserie chicken that you buy and then have leftovers on and you are not sure what to do with it? This happens to me quite a bit.
Here is an awesome answer for easy lunches or quick, healthy snacks.
I have made similar salads before, but the sweet, crunch honeycrisp apple really makes this special and super tasty. There are some other special touches like jalapeno! Yummmm- a spicy touch! Tarragon (delicious! I promise!) and then crunchy poppyseeds!
Plus I like to pile it all into butter lettuce leaves and eat it taco like! But you could also mix it with chopped lettuce and eat it in a green salad or on it’s own.

- For the salad:
- 3 cups shredded cooked chicken
- 1 large honeycrisp apple, small diced
- 4 green onions, finely sliced
- 1 cup celery stalk, finely sliced
- ½ jalapeno, minced
- ½ ounce fresh tarragon leaves roughly chopped
- ¼ cup parsley finely chopped
- Vinaigrette:
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 2 teaspoons poppyseeds
- Kosher salt to taste
- Butter lettuce leaves
- In a large bowl, combine all of the ingredients for the salad and gently combine.
- In a small bowl, mix together the olive oil, vinegar and poppyseeds and drizzle over the salad. Toss together and season to taste with kosher salt.
So funny, Heather!! I had to LOL because I used to live in a tiny culdesac on a hill! Haha! No kids ever came trick or treating and I totally ate my share of mini chocolate bars I love your use of honeycrisp here… my favorite apples in the world.
