The sauce that marinates the salmon and that also goes on the noodles as the sauce is absolutely dreamy. The salmon caramelizes around the edges because of the honey in the sauce, and the noodles, with their wonderful texture, soak up the sauce and become so incredibly delicious.

Then you have all of the fresh garnishes that make the whole dish extra delicious! I actually like to eat this kind of like tacos! I use a butter lettuce leaf and pile some fresh veggies, noodles and a bite of salmon and eat it all together. YUM.

Sticky Honey Sesame Glazed Salmon Skewers and Noodles

Ingredients
  • 1 pound salmon filet, cut into bite sized chunks
  • 4 skewers
  • Honey Sesame Sauce
  • 2 tablespoons chopped fresh ginger
  • 2 cloves garlic
  • 3 tablespoons honey
  • 3 tablespoons tamari
  • 1 tablespoon sambal (chili-garlic sauce)
  • 3 tablespoons toasted sesame oil
  • 8 ounces of skinny rice noodles
  • Serve with:
  • Thinly sliced cucumber, carrots, shallots
  • Fresh butter lettuce leaves, fresh mint leaves, thai basil
  • ¼ cup toasted cashews chopped (optional)
Instructions
  1. Preheat the oven to 450 degrees and cover a sheet-pan with a piece of foil.
  2. Skewer the salmon chunks, evenly distributing the pieces between the 4 skewers and lay them flat on the pan covered with foil.
  3. In the jar of a blender, combine the ginger, garlic, honey, tamari, sambal and sesame oil and if needed a tablespoon of hot water and blend until smooth. Take half of the sauce and pour it over the skewers. Let them marinate for about 15 minutes.
  4. Place the salmon in the oven and cook for 10 minutes. Put a large pot of water on and bring to a boil.
  5. Prepare the noodles by turning the heat off on the boiling water and leave the noodles in the water to soak for a few minutes. Then drain the noodles and rinse with cold water to prevent them from continuing to cook.
  6. To serve: Add the rest of the sauce to the bottom of a serving platter or divide between individual dishes. Place the noodles on top of the sauce and sprinkle with chopped toasted cashews (if using.) Add the fresh garnishes and then top with the salmon skewers. Delicious served right away or at room temperature.
