I will go on record right now and say that this is the best pumpkin pie I have ever had.

By pouring a silky beautiful caramel sauce over super thinly sliced apples I created a lovely caramel apple pie that is sweet, lightly spiced and incredibly soft and tender.

The coconut gets all soft and chewy and adds to the lovely filling of this coconut pecan pie. Totally delicious, and a slight twist on the original for you coconut lovers out there!
