How freaking cute is Chrissy Teigen?

That is really all I was thinking about when I cracked her new book Cravings…

But after I was done flipping through pictures that left me drooling (I’m talking about the ones of her and her hubby John Legend) I went back to the beginning and started reading. I was chuckling. A lot. Sometimes I was cackling (for those that know me in real life- it’s my loud kind of witch-y laugh). Pete was like “what the hell are you reading that is that funny?” and I was like: “a cookbook.” It is that funny by the way. Thai Pork and Rice Porridge- gluten free

It’s also consistently witty and rather heartfelt. The headnotes and personal stories read like an indulgent treat. When I was done, I was thinking that she was a lot more than cute (or gorgeous or any other superficial term for how drop dead gorgeous she is) the girl has chops! She can write! She can make me laugh and laugh (I don’t think I laugh enough normally.)

So then we get to the recipes. And let me tell you, I think her game is seriously pretty strong guys.

I obviously can’t eat all of the recipes in this book because of my food allergies, but there were a surprising amount that I can (and will). I have ear-marked recipes like Pepper’s Spicy Clams and Pasta, Sesame Chicken Noodles and John’s Tuscan Brick Chicken with Charred Lemons that I want to try. But when it was time to cook, I went straight to the Thai Mom section, which I could NOT resist and got cooking.
I had to share this recipe for Jok Moo (a Thai Pork and Rice Porridge) that my family devoured.

Thai Pork and rice Porridge

 

I loved that it was so easy to prepare and that the whole family loved it. It is like a Thai version of Chinese Congee that we ate a lot growing up, and it is everything that she promises- savory and cozy- serious comfort food. Thai Pork and Rice Porridge (Jok Moo)

Ingredients
  • Thai Pork and Rice Porridge (Jok Moo)
  • 1 ½ cups Jasmine rice
  • 2 chicken bouillon cubes
  • ¾ pound ground pork
  • 2 cloves garlic, minced
  • ¼ cup light soy sauce (I used tamari)
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • 3 inch piece of ginger peeled and thinly julienned
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 scallions, thinly sliced
  • Fried Sliced Garlic for garnish
  • *If you are uncomfortable using bouillon cubes use 12 cups chicken stock and salt it generously
Instructions
  1. Rinse and drain the rice with cold water and then transfer to a soup pot. Add 12 cups of water and the bouillon cubes. Bring to a boil and cook until the rice is soft and broken down into a porridge, about 45 minutes.
  2. While the porridge is cooking, in a medium bowl, combine the pork, garlic, soy sauce and salt and pepper.
  3. When the rice is a porridge like consistency, take a pinch of the pork between your fingers and drop it into the pot, repeating for all of the pork mixture. Add the ginger and cook until the pork “dumplings” are cooked through, about 5 minutes. Taste and thin the porridge with water if desired. Season to taste with kosher salt and stir in the scallions and cilantro.
  4. Divide the porridge between bowls and garnish with fried garlic slices.
