That is a beet crust Pizza that I posted on Instagram for #NationalPizzaDay. It is slathered with basil pesto and topped with a fresh herb salad. I will make sure I get that beet crust recipe to you soon!
It’s been snowing off and on this week and now has settled into dark, gross, gray wind and rain that pretty much just doesn’t want to stop. Which is why we are taking the kids and going to Mexico this next week for a long weekend. My little brother and his wife are being good enough to hold the fort down with Wilbur and we are skipping town. 5 days in the sun is calling my name. By the way, of course the weather forecast has now dipped from the 80’s to the low seventies in Cabo. But as the girls keep saying- “for people like us that will probably feel like it’s the 80’s- right mom???” People like us? Vampires from Seattle, you mean? Probably the seventies will be sweltering for us…
Comfort food. My stress level is truly through the roof. I know I am not the only one, and that no matter where you come down on the mess that is this countries political state you are probably feeling it. So in true food blogger style, I turn to comfort food. This week that consisted of Chocolate Mocha Donuts, Meatballs from Pure Delicious, Waffles for dinner and Banana Rum Cake. And that was all before the weekend. Do you just love that I am eating like that right before I go to Mexico and hit the beaches? What are your best tips for pacing yourself with the current stress levels?? I need help!
WHOLE30. Have any of you tried this? I have not, but I really want to and I have kind of talked Pete into trying this with me when we get back from Mexico. (I’m serious, the stress eating has become a real issue around here!) he says yes he will try it- but I don’t think he has any idea what he has actually agreed to. The first time I say “Wait! You can’t drink that, it’s alcohol!” he will freak out. But I am going to go for it! Anyone interested in doing it with me? I am thinking I will start right after the long weekend. Let me know if this is interesting to you…
Bon-Bon Earrings. I am asked about these often because I wear these in my Facebook Lives and on instastories all the time. I fell in love with these super pricey Le-bon-bon earrings last year and bought a few pairs over time. But then I discovered that for a fraction of the price there were almost exact replicas at Bauble Bar and now I have pretty much every color. Pete doesn’t get it, but I do.
Also after a ton of prompting from different people, I just downloaded the Outlander books to my kindle before my little vacation. Has anyone read these? Good choice? Any other favorites right now? I devour books like crazy so bring on the suggestions please!
OK- below are this past weeks Facebook lives, and this Tuesday you are in for a treat! I am going to show you how to do a Valentines Day dinner, start to finish in 30 minutes! (At least I think I can do that!) I will post the grocery list on facebook on Monday and then you can watch me tornado my way through the kitchen in Tuesday at 11AM so you can throw it together that evening! And Thursday I am going to try and Thirsty Thursday live from Mexico- because why wouldn’t we!!????
Enjoy the rest of your weekend!
Dark Chocolate Mocha Beet Donuts with Chocolate Glaze (Vegan and GF)
Thirsty Thursday! Special Occasion Champagne Sorbet Cocktails!
We are in Scottsdale to escape the rainy gloom and heading back tomorrow evening. It has been so nice here.
Have heard others try Whole30, but not sure if it was successful. It just depends on if you stick with it and exercise.
Reading Girl on the Train on vacation and my high schooler just plowed through a fun read I’ll read next called Cinder & Ella by Kelly Oram.
Have fun in mexico! It has been a nice break for us this week here in AZ!
