Dark Chocolate and Cranberry Cookies
I almost made it two weeks eating healthy. I mean, I love salad, but I guess I love dessert more…
I made these for my daughter Pia who, even at the tender age of three, has a real chocolate issue! And even though these are dark and rich, she loves them, and chose them over regular chocolate chip!
When you crack these cookies open, still warm, you get rich, almost brownie like texture in the cookies, and then they are studded with melting chocolate chips, and little sour bites of dried cranberries which look like little red jewels nestled in the chocolate.
If you need a real chocolate hit- here is your cookie!
Dark Chocolate and Cranberry Cookies, makes 3 dozen
1 cup butter
2 cups sugar
1 tsp vanilla
2 eggs
1 ½ cups flour
1 ½ cups good quality cocoa powder
2 tsp baking soda
½ tsp salt
16 oz chocolate chips
2 cups dried cranberries
In the bowl of a standing mixer, beat together the butter and sugar until fluffy.
Add the vanilla and then the eggs, and beat until well combined.
In a separate bowl, combine the flour, cocoa, salt and baking soda.
Add the dry ingredients to the bowl, and mix until just combined.
At the end, gently mix in the chocolate chips and the cranberries.
Scoop in rounded spoonfuls onto a silpat or parchment lined sheet pan.
Bake at 350 degrees for 10-11 minutes.
Let cool and Enjoy!

I love this combination! I think I’ll try them after I’m done with our month of detox, but they’re tempting! I might try them with white chocolate chips.

Ooh yummy, these look really similar to cookies I make, except I put in pomegranate arils instead of cranberries. I also have done half chocolate chips and half white chocolate chips and it makes for a beautiful, and even more delicious cookie!
I noticed you often mention “A good quality cocoa powder”. I use cocoa powder alot in my recipes and have used Hershey’s and Trader Joe’s but am not impressed with either. I was hoping you could let me in on where you purchase yours or the brand name. Thanks so much. Nancy
Hi Nancy! Two brands I love are Valhrona and Scharffenberger. Those just happen to be the two better brands at my local store- they both have really dark color and a stronger flavor. Look around at your local stores and see what they have- or if you are feeling adventurous experiment with some brands you find on-line.

I had 14 of our dearest friends over for a Friday night surprise 49th birthday party for my husband. I spent the day baking (a real treat!) and then hid it all in my son’s bedroom. When the friends showed up at our front door at 8pm, boy was my husband surprised!
