Hello, and happy Thursday guys. We have had a lot of action around here and when you are busy and working like crazy, the last thing you really want to be worrying about is how you are going to get dinner on the table in an easy, healthy and tasty way that your kids will actually eat and like.
In these situations, I love Stir-Fry’s like this one.
They are seriously a snap to throw together and while I like to eat my stir-fry as-is, I can make steamed rice fr the kids and they are super happy with that.
I love this particular dish right now because of the unexpected addition of mango which is so sweet and juicy- but keep in mind that this could totally be a place holder for other fruits that are in season right now like peaches, nectarines or apricots which would also be awesome!
- 2 tablespoons coconut oil
- 1 red onion, cut into bite-sized chunks
- 2 bell peppers, cut into bite-sized chunks
- 1 jalapeno pepper, thinly sliced
- 1 pound peeled and cleaned shrimp
- 1 mango cut into chunks
- 2 tablespoons chile powder blend
- kosher salt to taste
- In a heavy pan over high heat add the coconut oil and the red onion. Cook for about 1-2 minutes and then add the peppers and jalapeno and fry, stirring often, another minute.
- Add the shrimp, mango and chile powder and cook until the shrimp are just cooked through, about 2 minutes. Season to taste with kosher salt and serve immediately.

Where is the recipe to make the chili powder blend? Or where do we purchase it?
Hi Suanne, It’s a common spice blend- just look for chili powder at the grocery store!
This looks as beautiful as I’m sure it is delicious. Are those flowers edible? Can leftovers be refrigerated and served for lunch the next day, what is the shelf life on this dish. Thank you so much for your creativity. This one sure looks like a winner
Yes- marigold flowers are edible! So pretty, they are some of our favorites! I would probably not keep in the fridge for more than a day or two!

OMG, this chili mango shrimp stir fry is EVERYTHING!
I’d love to make this for a group of women. One in particular cannot take spicy food. Would this be too spicy for such a person? I know sometimes things like jalapeño pepper can get mild once cooked.
Hi Kathy! SHoot, I think it just really depends on the person. Definitely you could bag the jalapeno and just do the chile powder which tends to be more fragrant and less spicy- but I have no idea if that will do the trick? Will you let me know if she tries it?
