Strawberry Cake with Vanilla Frosting
I know how many times I have mentioned that I have a pretty big family, and there are a couple times a month where a bunch of my family members have birthdays clustered closely together. When that happens, we have a tendency to have “joint” birthday dinners on the Sunday in the middle of them. Most of the time my mom, my sister and I each make one cake and then everyone gets their own candles to blow out. It also means that some of us piggy-piggies get to have three pieces of cake and call it “sampling.”
This is the cake I brought to a recent “joint birthday”. It was a triple-decker Strawberry Cake with Vanilla Frosting. We still have tons of ripe gorgeous strawberries and the berries coming from the local strawberry farms are so beautiful and sweet. I pureed them and baked them right into the vanilla cake batter. The cake is not too sweet, and when it is paired with sweet tartness of the strawberries and the super sweet vanilla frosting, it is wonderful.
Strawberry Cake with Vanilla Frosting, serves 12
1 cup butter
1 ½ cups sugar
4 eggs
2 tsp vanilla
2 ½ cups flour
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 ¼ cups strawberry puree, (about 2 cups fresh strawberries)
Vanilla Buttercream Frosting
½ lb butter
3 ½ cups powdered sugar
¼ cup milk
2 cups sliced fresh strawberries
1)Preheat the oven to 350 degrees. Prepare three 8” pans with non-stick baking spray.
2) Puree the 2 cups of strawberries in a food processor.
3) Cream the butter and sugar together until light and fluffy.
4) Add the vanilla and the eggs one at a time.
5) When the eggs are all added, beat the batter for 2 minutes.
6) Meanwhile, mix all of the dry ingredients together r and add it to the batter.
7) Add the strawberries and mix in until combined.
8) Divide the batter between the two pans.
9) Bake the cakes at 350 degrees for about 25 minutes or until just baked through.
10) While the cakes are baking, make the frosting by whipping everything together.
11) Let the cakes cool.
12) Spread some frosting over the first layer.
13) Sprinkle the 2 cups sliced strawberries over the frosting.
14) Place the second layer of cake on top and repeat the process with the third.
15) Frost the whole cake with the remaining vanilla buttercream frosting.
Slice and Enjoy!

Beautiful cake! I love the strawberries in the middle!
Seriously – cake perfection!! Yum!
Gorgeous!!! I will for sure me making this!!
Amanda- I have no doubt in my mind you could elevate this cake about 10 notches- your cakes are to die for!
How long will the strawberries keep fresh inside this cake?
Looks yummy, sweet and yet light!
Jen Marie- Hi I think the strawberries are fine inside the cake for a day or two. The frosting has a lot of sugar in it, so it will make the strawberries “weep” a little, but the cake kind of sops up the moisture. I just stuck the leftovers in the fridge. I will say, I don’t think the cake is as good after the first day. In my experience, while the fruit puree make the cake moist initially, it seems to go stale more quickly because there is less fat in the cake as you replaced it with fruit. So best day of. If you have to make the cake ahead of time- I would freeze the layers immediately, and then frost them as they are thawing.
This cake looks so delicious! I love that you layered in strawberries with the cake and frosting.
I think it is essential that I attend one of these “joint” b’day parties. Love that you added the fruit puree to the batter.
This little piggy says wee wee wee – all the way to the strawberry fields forever!
lol!!! lucy!
Great timing … a friend had a strawberry cake recently for her birthday and raved about it. I’ve never made one, but have not been able to get ‘strawberry cake’ out of my mind since May (!) and it has been on my list to find a good recipe to make this summer … thank you for reading my mind 🙂
Love this! I made a lemon cake yesterday with strawberry buttercream! We’re on the same page : )

This looks gorgeous and I’d like to bake it for a party next weekend, but I’m confused. You begin by saying it is a triple decker, the picture shows it being three layers. However, the recipe says to prepare 2 round pans. Your pictures show 3 pans ready for batter and the instructions also show that you are using 3. Please tell me, do I use 2 or 3, is there enough batter to use 3-9″ round pans? Mahalo!
LIZ!!! you were right- that was my mess up. Use 3 8″ pans. Correcting this minute!!!
Sorry- mommy brain. All fixed now 🙂
The strawberry cake looks fabulous!
No…I would not add chocolate to the recipe.
Giggle….giggle.
XXOO
vicki- there is a first for everything!
Thank you Heather, I can’t wait to make this now that I know for sure how many pans to use. And hey, I have 5 kids and 5 grandkids, I know alllll about mommy brain.
lol! you are a busy woman!
I made this cake recently just for fun. It came out great, especially just the cake part, sooo addictingly heavenly n delicious. I like the idea of using fresh strawberries instead of most recipes that call for silly things like strawberry jello or colouring or just pieces of frozen strawberries. I had trouble with the frosting, it was my first time making frosting n I ended up putting too much sugar hoping to get the right consistency but it turned hard. But no big deal, when I keep the cake out for a while, out of the fridge, the frosting softens up without ruining the cake. Thanks for the recipe!!
Glad to hear that you liked the cake recipe Vandana 🙂
Will make this for our 2year anniversary. Im sure his family will love it ! Thanks. Hopefully we can make it together
November 16 cant wait! That cake will be perfect for the occassion!
