In my mothers house, we didn’t have a microwave until just a few years ago. Despite years of begging by the rest of the family, my mom absolutely, and without possibility for persuasion, said NO. My mother did not “believe” in them. She thought that they would rot your brain, and microwave your insides! She remained firm, through all of our teasing, until very recently. One of us brought it home during a college summer break, and it was banished to the basement. If we wanted something heated up- that’s where we had to go. The result was that we did not grow up with nuked leftovers, soggy freezer snacks, and above all else, we never had microwave popcorn. My mom taught us how to make it the “old fashioned way”, in a pot. I remember thinking at the time that my mom was so sophisticated for using olive oil instead of canola. But the truth was, it tasted better. So this simple snack may have dirtied an extra pot, but the result was well worth it. It is so delicious, and really cannot even be compared to the overly salty, hydrogenated oil soaked, fake butter flavored kernels in a bag! Fresh popcorn is still one of my very favorite, (and healthy) snacks, and it doesn’t get any easier.
Don’t be afraid to spice up this recipe! There is the classic melted butter, but you can add chilli powder, or fresh herbs and grated parmesan cheese- even truffle oil to spice things up! Use your imagination, and your preference for flavors to create your own favorite snack.
Popcorn
-2 Tbs Olive oil
-2 Tbs fresh rosemary
-1/2 cup fresh popcorn kernels
-Kosher salt and chili powder
1) Heat oil, rosemary and popcorn over medium heat, covering with a lid.
2) Cook the popcorn, covered, shaking pan frequently, until popping stops- about 3 minutes.
3) Pour popcorn into a bowl, and salt with Kosher salt and chili powder to taste.
By the way, for all of the trash talking I did about my mom and the microwave… Well, as I just planned my dream kitchen, we realized when all of the plans were finished and final that I had never even though to add a microwave! So, guess where ours will be residing? The basement!

We were making pop corn and I just went in to see if there was anything, love the chili powder add on, great! We still are making it on the stove, much better.
