My sister in law Natalie made a big mouthwatering batch of pulled pork last weekend. Like crazy good pulled pork.
But Natalie seems to suffer from the same deal that plagues all women in my family:
The need to feed…That rhymed.
And there were leftovers, which I greedily took home to my house. And while I die over a good pulled pork sandwich or a great batch of carnitas, I have had chili on the brain. Chili Verde specifically.
Now you may look at this chili and say “hey! That’s not green!” and you would be right- but it is made with green salsa. And green salsa is made with green tomatoes, green onions, green tomatillos, green chili’s and green cilantro. Oh, and green lime. So that sounds pretty green to me.
Plus, who cares? Cause it is really, really, really good.
To make this Pork Chili Verde:
In a large heavy pot, heat the vegetable oil over medium heat and add the onion. Sprinkle with kosher salt and let cook until soft and translucent.
Add the pulled pork to the onion and cook about 5 minutes.
Add the salsa verde to the pork and onions and simmer together.
Rinse and drain the white beans.
Add the beans to the chili.
Add the chicken stock, put a lid on the chili and simmer for an hour.
Add the cumin and chili powder and then season to taste with kosher salt.
Garnish with green onions and cilantro and serve immediately.

My Tia has made pork chile verde for over 6o years. Your basic recipe is good, but a true chile verde does not have beans, much less white beans. Serve borracho on the side.

Could I cook this in a crockpot?
Probably Charles, but I think you would have to cook the pork shoulder first because of the fat/connective tissue? You can certainly cook that in the crock pot, but I have found that the pot doesn’t break down the fat and melt it like braising. However, the fat is very obvious when coked in a crock pot and you can just dispose of it once the shoulder is done cooking. If you wind up cooking it all together in one batch please let me know how it does this way- it sure would be easier!

Sure, of course Anna- but you might want to try and “freshen it up” with some fresh cilantro and lime juice.
Made this tonight to take to a chili cook off at work tomorrow. I used my favorite tomatillo salsa recipe and my crock pot carnitas recipe. I had combined the two before, but not like this. This is delicious!

I made this for my daughter’s second birthday for all the parents to eat. The guys were going back for second and third helpings. A year later, people still talk about how good this chili was. Seriously, this is one of the most delicious things I have ever created.

OMG, we cooked a pork butt in the crock pot last night for pulled pork. Had a lot left over. I’m so glad I found your recipe for this soup/chili!! It’s simmering on the stove for dinner right now and it’s amazing! Tastes like it’s from a restaurant! I used Guy Fieri’s Mean Green salsa. It’s pepper based and mild. I am not a fan of tomatillos. Too bitter! But most of a jar of that salsa in the broth, with the pork… Ohhhhh so good! Especially since the wrath of the polar vortex is back in Western NY and we have -20 degree windchills! Found on Pinterest! Sooooo good! Thanks!

Used leftover pork from tacos made with Pioneer Woman’s spicy pulled pork…thickened with a handful of tortilla chips run through the food processor with fresh cilantro (from Rachael Ray’s green tortilla chili)…besides green onions, also topped with some avocado, sour cream and feta cheese. Yum!
I found this recipe on Pinterest and made it tonight! I used chicken instead of pork and added some sour cream and crushed up tortilla chips on top. THE BOMB.COM!!! My husband LOVED it and said he wants to eat it for lunch on Christmas

Very simple recipe that even I can make! Although a little too much on the chicken stock and 4 cans of beans is wayyy to many. Great flavors otherwise!
Not the recipe I was looking for, but this looks much better.
I just used this recipe but veganized it. (subbed jackfruit for pork and better than bouillon vegetarian chicken stock for normal chicken stock) My boyfriend said it’s the best thing I’ve ever made him!
seasoned the jackfruit w/ generic fajita seasoning, liquid smoke, cinnamon, and a little maple syrup before adding it to the rest of the stew.

This was excellent, though I made a few changes. Halved the broth as I wanted a thicker stew. Added can Hatch green chilies and a can of drained hominy. Also more chili powder as we like a good bite. This is definitely a keeper.

I do love this. But I have always made it with chicken legs instead. Once I served it to a large crowd with tomalito, a creamy cole slaw laced with pickled jalapenos, and a couple of veggie Relishes (a quick Peruvian onion pickle, and another made with radishes, carrots, jicama, and cilantro). Received lots of positive feedback from everyone but my husband and one if my sons. —- I personally crave this meal, and my husband likes it okay, he just *usually* has issues with liking any bean dishes… This is one I’ll fix again anyway, but now that the kids are grown, I’ll freeze most of it for lunches for myself. Yummmmm!!!!
I didn’t have salsa verde so used regular chunky salsa and it was superb! Will make this one again. made a lot so freezing some and giving some away. Also it was super hot so I put some cream cheese in mine to cool it and make it a little more mild.
